    Tonight we had spag bol made with courgettes, soya mince and chickpeas, home-made spicy sultana cake after.

    @Florenceem - sorry to hear you're suffering and hope your back improves quickly.

    I had another portion of yesterday's veggie stew with pasta and salad followed by stewed windfall apples with a spoonful of honey and a coffee.

    I bought a kilo of rolled beef brisket from the butcher yesterday (I’m trying hard to support small independent stores, but it’s hard when they can’t compete on price with the supermarkets and I’m watching the pennies so I don’t buy as much from him as I would like).

    I’ve just chucked the beef into the slow cooker to roast (I rubbed it with a teaspoon of beef stock paste first) and we’ll have a slice of that each tonight with roast potatoes, carrots, broccoli and gravy.  I have several plans for the leftovers, including beef and mushroom goulash, beef and veg noodle stir fry, and pulled beef chilli. It’s going to be a very meat-heavy week if I can’t find any space in the freezer for the leftovers! 🤣

    today I’m cooking some pork steaks we bought from our local farm, baking them with squash, mushrooms, sage, garlic onions etc them cook down the sauce and add double cream and a small amount of Parmesan to make it a lovely umami flavour. Serving with steamed cabbage and roast potatoes for them.
    Note to self - STOP SPENDING MONEY !!

    haven't been about and am still recovering from jet lag from returning from Canada - overnight flight meant about 35 hours straight with out any real sleep.  And that was as of Friday....yawn!!!

    So OH got us fish and chips on Friday which was nice - although I ordered scampi on the excuse it was a bit lighter on the tum.  Last night he did a coquelle St Jaques (sp???) with toast followed by rack of lamb and salad.  Both nights we partook of the butter tarts I brought back with me - so nice.  I brough back Fudgeos as well - really chocolatey cookies - similar to Oreos but much much nicer.  Tonight will be sandwichs I think.

    Best thing I had while in Canada was the back bacon.  I think I went through about 2 pounds of it in 2 weeks.  Nice thick slices of unsmoked pork loin made into bacon in a recipe that includes maple syrup.  Divine!!!  And when I say thick - I mean 3 slices per inch.

    And if you ever go over to Canada and find yourself in Toronto it's now official that the St Lawrence Market has been named number 7 in the list of the top 10 markets in the world.  Best place to get the best bacon sandwiches - which are of course made with back bacon.

    Thanks for the get well messages. 
    Been to Church - we had a questionnaire to complete after the service followed by lunch - yummy beef stew followed by meringue filled with fresh cream and topped with cherries and strawberries.

  • We had lamb steaks, roasted in the oven, roasted carrots and potatoes and a few frozen peas. All cooked by DH, who made yummy gravy to go with it.

    Usual Sunday cookathon today.
    I made minestrone soup, broccoli and stilton soup for lunches during the week. Vegetable lasagne for daughter, with leftover white sauce I made cauliflower cheese. I also made some cheese scones and a marmalade and ginger pudding.

    So dinner was roast potatoes, veg, pork, Yorkshire pudding and cauliflower cheese. Plus some red cabbage from the freezer.

    I made this loaf Easy No-Knead Golden Linseed Bread Recipe (bakerybits.co.uk) which has come out looking gratifyingly like the recipe photos but has scattered linseeds everywhere in the kitchen. I shall have to sweep out the oven when it's cooled down. I put a tray of windfall apples in at the same time following this recipe Best Roasted Applesauce Recipe - How To Make Roasted Applesauce (food52.com) and despite my forgetting the butter at the beginning they've come out tasting delicious. I'm completely converted to a pinch of salt with cooked apples.

    @JIL that cookathon sounds delicious. 

    Jacket potato with beans n cheese last night (baked two in the air fryer).
    Breaded haddock and LO vegetable rice tonight. Think I'm slowly gettiing the hang of the air fryer. Also used the residual heat to make another batch of pizza dought (made some last night too but thought I'd make another 4 tonight. The top of the air fryer turns out to be a great proving shelf after it's been used).
