Lovely dinner last night - I have lots of free tomatoes so roasted some with garlic and onion in balsamic vinegar and oil. Did a tray bake topped with faux nutell.
Easy meal tonight with more tomatoes and lo roast potatoes + chestnut mushrooms.

Freezer dinner. I was at work later as I’m covering a colleague. I didn’t take anything out so I’ve got pizza, wedges, nuggets etc to have plus odd bits of salad left for the veggies:money::rotfl::T2

OH has prepped the wood pigeons but intends us to have them tomorrow. So tonight will be schnitzel and reblochen and bacon potato cakes all courtesy of Lidl. I've some rocket as well and tomatoes so it will be a somewhat balanced meal.I’m a Forum Ambassador and I support the Forum Team on Debt Free Wannabe, Old Style Money Saving and Pensions boards. We are having a roast chicken dinner today. It feels like a Sunday here and the sky has been dull most of the day, the air is quite chilly... perfect for a hot comforting meal.
I am part microwaving the roast potatoes, the chicken is thigh and legs and a banana loaf will be filling the remaining space in the oven. It should all be cooked in the oven under an hour. I will also use the steamer for carrots, swede, cabbage and peas.
Should have leftovers for sandwiches and soup during the week.

The promised roast pork here, cooked the spuds in veg oil and a Aldi vegan nut roast thing squirrelled away from Christmas for DS2 (vegan).
Like many have spent the day watching our Queens funeral, bought out some unexpected emotions in our house, sending love and hugs to all that need them.Note to self - STOP SPENDING MONEY !!

Slow cooked rabbit here (in the new InstantPot or R2D2 as he's known now!) having it with mash. Also made a Pear & Pecan cake to use some pears that a lovely man out of the village next to mine gave me, found a load of pecan nuts in store cupboard so feeling smug that I've used up something that was sitting doing nothing!

Risotto from the freezer stash today with some added floppy courgette.
Made a big vat of veggie chilli, using up some freezer items (i add blitzed carrot into it for a mincey texture amongst other things and had several bags in the freezer from blitzing some wonky carrots).
I feel like the only person in the county who hasn't been sat in front of the tv today. Given I've been to enough funerals through my life already the idea of spending the day watching another doesn't particularly float my boat.
