No cooking for me today as it was lunch club at SA - we had bangers and mash followed by sticky toffee pudding with sauce and custard.
Jil - I had a look at some sites about rising cost of baking a Victoria Sandwich - they weren't even using fresh cream as filling. I use budget ingredients and people look forward to my bakes. My banana oatmeal muffin recipe is too much for just the 12 muffin tray so I need to do 2 mini loafs as well. But I didn't count on us having mice. Tonight we just had a load of salad items, with leftover potatoes from yesterday done in the actifry.3 -
Used some more freezer bits up.
Some egg noodles, Crayfish, sliced spring onion the end of a bag of Asian style stir fry veg, then added some extra peas.
Added a coconut and lemongrass stir fry sauce.
Unfortunately it wasn't great. I think actually I'm not a massive fan of lemongrass. There's some left for tomorrow (can't bring myself to throw it away) but I think I'm going to add a squeeze of lime juice to it. And serve it with a kfc style drumstick (also from freezer).
I'm trying to use up all the random bags of bits in the freezer before xmas. Fed up of them all falling out and not really knowing what's in there.Feb 2015 NSD Challenge 8/12JAN NSD 11/16

the banana oatmeal muffins are incredibly easy. a couple of bowls and a fork and Nora's your aunt.
re the blackening bananas - for me anything no longer green or otherwise starting to freckle is too ripe so if they get that far I let them sit a couple more days then peel them and bag them up 3 together and bung them in the freezer. recipe calls for 3 so I can just thaw them (look very nasty at that point) and dump the entire bag into the recipe - lots of liquid comes out but it's all good.
Here's the version I put together for friends at work - some of the detail won't be needed for those of you who are accustomed to across the pond cookery books....Banana Cake
Multiple bowls make this easy.
Bowl 1
Soak for a few minutes 1 c oatmeal (any type as long as it isn’t cooked, or use muesli)
In about 1 c milk (or more – it depends – like so much in life)
Add 3 really ripe bananas – mashed (the riper the better, or frozen then thawed)
Mix in 1 egg
Melt (or soften) ½ c butter (125 g) and mix in
1 c sugar (which is about 225g but I’m happy with 125g) (go for the chunky brown granular stuff or whatever is in the cupboard, or honey)
& add to mix but not too melted hot as you’ll cook the egg
Bowl 2
Mix together
1 ½ c flour (200+ g) (oatmeal or wholewheat is nice, but NOT self raising)
1 tsp baking soda (bicarb to a brit)
1 tsp baking powder (which is essentially bicarb with a soupçons of cream of tartar – honestly! So if you don’t have it you could just double the bicarb)
Mix in wet stuff in bowl 1 into bowl 2.
Pour into greased pan & bake.
350 F, 160C or 150 C (fan assisted), don’t ask me about gas marks I haven’t a clue.
The original recipe (which has only 1 banana and no oatmeal) says 9 inch square pan for 30 – 35 minutes. I use a 4 x 14 inch loaf pan and it takes 45+ minutes. Or it will do about 14 muffins which will need about 25-30 minutes.
A c is a cup in Canadian measurements which is 8 fluid ounces. Or about 225 ml. but just wing it cuz that’s what I do and it turns out good enough for my very non-discriminating friends and associated gannets. Oh & sometimes I put in nutmeg &/or cinnamon. Or use grated apple if I’m low on bananas. Or add walnuts. Or chocolate chips. Or dried cranberries. So you can see that this is an absolute exact science and why varying anything in this recipe will cause the entire universe to collapse in on itself.

Hog roast sausages in baguettes tonight, I'm on night shift and by the time it gets to Thursday night I really can't be bothered with making a proper meal! Just air frying some bacon to do bacon & egg sandwich filler for tomorrows baits for me & lovely bf. Got a glut of eggs so trying to jazz them up a bit rather than just egg mayo!3
