Tonight I am baking cod, chunks of pak choi, ribbons of carrot and perhaps some other veg, topped with garlic, ginger and spring onion in a soy and rice wine sauce. The recipe called for sea bass but I’ve gone for the cheaper alternative. It’s supposed to be wrapped in parchment parcels but I’ll probably chuck it all onto one of my white enamel baking trays and cover tightly with foil.
  • I had a couple of rolls with stilton and salad followed by a coffee. The weather here is muggy and humid which has made today very uncomfortable and put me off the idea of cooking.

  • Brie - thanks for the recipe. It would be a good pud for our lunch club where we have a GF member.
I used lo curry sauce - from a jar that was in the freezer with a chicken breast, rice and naan bread for dinner.
I baked a strawberry and a chocolate loaf cake.
I have had a go at baking a GF cake for tomorrow but I didn't have any GF flour - found a recipe that uses custard powder. Mr F and I will taste test before I give it to anyone else. I plan to buy some GF flour when I next shop.

Tonight I am making chicken fajitas, using wraps, onions, peppers, garlic, tomatoes and lettuce all free from the community fridge, and some of the leftover chicken from the Sunday roast.

I'm not sure about dessert - I have stewed some apples and was going to make a crumble with them but that seems a bit heavy to have after fajitas, so we might just have some ice cream instead :)

Need a little advise from folks with Air Fryers as I get to grips with mine

How do you generally calculate cooking temp / time?
I'm kinda working on following the temp per cooking instructions but not sure how to adjust for time? Is there a rule of thumb that you follow?

We're supposed to be having the weisswurst this evening but OH has flagged the conflict that we have had sausages for breakfast.  I've pointed out that there's a big difference between weisswurst, mit brot und senf and pork sausages, bacon, eggs and beans.

So knowing him it will be fish and chips.

I've still got plenty of meat stripped from the Sunday roast chicken to use up, so I have made a chicken and sweetcorn pie (with some chopped shallots and a little bit of chopped green pepper too, in a creamy white sauce) for tonight. The last of the meat will be turned into some Coronation chicken to have as a topping for baked potatoes tomorrow night.
