Red pepper, carlin peas and tinned toms made into a sort of a casserole eaten with cous cous, peas, sweetcorn and green beans.

Made a vegan spag bol tonight. Wholemeal spaghetti with sauce made from sliced courgette fried in a little rapeseed oil, added half a tin of chopped tomatoes, half a tin of chickpeas, 90g soya mince, dried herbs, some tom puree, smoked paprika, salt and pepper, a little milled  flaxseed to thicken. Fresh basil and nooch (tasty substitute for parmesan) on top.
    Fresh pear for afters.

Corned beef (tin has been lurking in the cupboard for ages) with mashed carrot (and possibly swede in it ...it was from the freezer, and orange...that's as much as I know), and first of the home grown runners - which was disappointingly tough.

Not sure about tonight - I've got some roasties from the freezer defrosting so will have a rummage and see what I can add to them. Was thinking corned beef, but that's earmarked for lunch and don't really want the same for dinner.

about to start a rhubarb and custard cake.

pork chops thawing for supper.  there's frozen veg to roast or otherwise cook up to have with rice.  courgette, peppers, onions/shallots, tomatoes.

fyi - cake calls for 150g tin of custard but I've got a 500g tetra pack so it will be extra custardy and with extra custard for the OH to pour over top.

please add your prayers to mine that the OH gets us pizza tonight.  failing that I'll be doing frozen Lidl schnitzel with tinned potatoes plus salad.  lots of romaine needs to be used up and I keep hoping to unload the freezer enough to do a defrost.

I don't think I mentioned the marvellous salad OH did the other night - mozzarella with IoW (etc) tomatoes with parma ham and fresh basil and very good olive oil.  It's so wonderfully refreshing I don't know why we don't have it more often.  Sopped up with chunks of Lidl's sour dough boule bread.

I filled my oven last night so have enough leftovers for dinner tonight - may need to add a tin of baked beans/peas.
