    Tonight was beef fajita on home grown rainbow chard and paprika griddle flatbread, served with a dollop of 25p sour cream. Tortillas are ~£1 for a pack of 8. Flatbread was self-raising flour, salt, a sprinkle of paprika, water and a small coating of oil.
    Mortgage free by 33 - (21/07/22 - 32 years and a bit...)

    Most DIY problems can be solved by a combination of spanner, pliers, screwdriver, Allan key and a blade. (Hold it, twist it, cut it!) Very occasionally industrial language, a hammer and an adhesive may need to be added to the mix. (Curse it, hit it, patch it!)

    Fridge pickings today, there’s load of food to snack on, so we won’t starve. Too hot for formal eating. Have chopped up a huge melon, which is now in the fridge ready for later 
    Note to self - STOP SPENDING MONEY !!

    I was up early (woken by the dog at 5.30, asking to go out) so I roasted a large chicken then as I thought it might be too hot to have the oven on later.  I’m going to strip the carcass when it has cooled right down and we’ll have a chicken salad for dinner tonight.

    I found a nice recipe for chicken, carrot and leek in a cream sauce with a scrunched filo pie topping which I am going to make for tomorrow’s dinner. It sounds like the sort of thing we could eat at room temp with a side salad.

    I also chopped up a melon this morning and mixed it with some grapes and a tin of pineapple.

    We had salad last night, made more than enough to last today. The oven wont be going on. If anyone wants anything cooked, the actifry is in the garage,

  • We're having lamb leg steaks on the barbecue this evening, with pitta breads and salad and possibly some rice for DH if he wants more carbs.

    I've also been cooking chicken this morning. We were meant to be having chicken risotto tomorrow but instead I've cooked the meat today so we can have sandwiches for dinner tomorrow. Also cooked a Spanish omelette (just a Tesco one), some sausage rolls, and baked a lemon drizzle cake and cheese straws. No need to have the oven on at all tomorrow and hopefully Tuesday.

    No cooking today for me as after Church we had a picnic/bbq in the park to celebrate prize giving and end of year Sunday school & kid's club.

    To which i should have known that as several members of my family are Soldiers 🤦‍♀️ brain addled by the heat.

    Roast potatoes (home grown), roast onions, Yorkshire puddings and broccoli. With sausages (YS) for OH and a cauliflower cheese grill for me. Followed by a chocolate muffin (YS) and raspberries (olio freebie).

    I haven't been cooking or eating much for the last week or so but have felt more like it in the last couple of days. Saturday's dinner was cous cous with pomegranate seeds, coriander leaves and lemon juice with fried plantain and mushroom curry. Yesterday's dinner was chilled radish soup made with fat free greek style yoghurt and walnuts and topped with the heel of an elderly cucumber, a spoonful of pesto from a jar and a sprinkling of grana padano that needed using up. Very nice when I'd added enough salt.


    Also made this soda bread again as it was so nice the last time I made it and I wanted to use up the last few walnuts in the bag. Quick Carrot And Walnut Bread Recipe | olivemagazine
