I had a couple of huge aubergines and last weeks courgettes and tomatoes so made a huge pot of Ratatouille. Froze 3 dishes and made a couple of work lunches for daughter (with pasta) with it. We had it with fresh tuna steaks, new potatoes and green beans.
Chopped up a load of fruit and had it with yogurt afterwards.4 -
I made Yotam Ottolenghi's butternut squash with orange oil which was delicious, eaten with peas, french beans, spinach and sweetcorn from the freezer.
I didn't have the pecorino or the pumpkin seeds but am not especially keen on either and they are both used as a garnish rather than an ingredient so I omitted both and didn't bother to scratch around for substitutes either.
Anyway that's used up a whole squash and two oranges that were sitting rather forlornly in the fridge as well as a whole one and a half tablespoons of honey, the store cupboard mountain is going to take until the next decade to use up at this rate.

We have a load of lamb chops waiting for the bbq tonight. New potatoes as we didn't use them last night.
And I'm looking forward to the bbq as OH has been grumbling for the last year about the fact the "flavour bars" on the weber had almost completely disintegrated to the point it will be hard to remove all the crumbled bits. Any time it's been mentioned the line has been "yes I must look into how to get new ones". Well my friend decided to come yesterday so I duly pealed a few more spuds and a parsnip and found a bit more meat because ''No i haven't eaten that be lovely'' just as things were literally starting cooking friend informed me I'm coming with food and turns up with a mcd. I thought well I can't turn back regard the meat...anyway
The parsnip and potatoes have lentils added to make soup for lunches. The ''extra'' meat is now cooked and in the fridge to be something on tue/wed. Friend went home with the original thing I defrosted saying it will do his lunch today...
And meanwhile I will be finishing off the pasta bake from Saturday tonight. So all a bit topsy turvy but all turned out ok in the end.3
