Today will be pork shoulder with cauliflower and roasted carrots.
In true MSE style I have poached the last few pears that were going soft so will have them with some ice cream for pudding.2 -
I'm making a puff pastry galette (or possibly plait, depending on how far the pastry goes) filled with a smushed-up mixture of pork sausagemeat, sauteed diced red onion, garlic, celery and green pepper, chopped parsley and baby spinach, a dash of cumin, coriander leaf, black pepper and cayenne. Will serve it with green beans and asparagus which I will steam first then stir fry in garlicky olive oil.
I've just baked a huge meringue which will be topped with thickly whipped cream, sliced tinned pear halves and a sprinkling of blueberries for this week's puds.
I'm also cooking up a big pan of vegetable peelings, as the worms in my wormery tend to prefer soft cooked food. I am cooking for worms. At least I will get a nice pan of vegetable stock to use in this week's soups though. But honestly. Cooking for worms.5 -

Pork chops with squash is happening today I think, yesterday we ended up with pizza which quite frankly was disappointing - an Italian brand from Asda (Giovanni??) and much too doughy. I prefer a thin crust and so does my ever thickening waist.I’m a Forum Ambassador and I support the Forum Team on Debt Free Wannabe, Old Style Money Saving and Pensions boards. Mash, vegan fish fingers and beans tonight.
Made the mash with the hand blender but not sure i really like it like that, tends to turn it a bit gluey rather than mashy. Still, not 100% better yet so it was easier than bashing with the masher.Feb 2015 NSD Challenge 8/12JAN NSD 11/16

I use my food mixer to mash my potatoes @kerri_gt always gets rid of lumps. Hope you will soon be back to your best. It's not nice being poorly.
Today I had a break from the traditional get ready for the week ahead Sunday, probably because I'm off work tomorrow. So I made a really easy dinner. Chicken thighs wrapped in bacon, green beans and a tray of roasted potatoes, sweet potatoes, red onions, parsnips and carrots with a honey and tahini dressing. I had halloumi with mine.

Got some lemon and pepper pork chops (from As*a) defrosting. I thought they sounded nice and different for a change. Tonight with mash, and broccoli cheese sauce. Tomorrow with noodles. There are 5 chops, seem big so any left will be refrozen, from cooked.2

I spent some time eyeing up the electric potato masher from Lakeland, but decided against it because I thought it would make the potatoes gluey in the same way that a stick blender does. Hope you feel fully restored to good health soon, kerrie!
We are finishing up the sausagemeat puff pastry plait which I made last night - it was really nice, certainly something I will do again in the future. More of the traybaked meringue covered in cream, pears and blueberries for pud.2 -
