    Coming in from lurking. 

    Huervos Rancheros (aka Jamie Oliver’s Mexican breakfast) for dinner with rice and black beans in the side. It tastes lovely.

    I think Huervos is like so many dishes - everyone has their own version.  The one I learned was meant as a breakfast dish so no rice or wedges and the tortillas (wheat not corn) are fried first and the rest added on top.  And the eggs are scrambled.  It's what I love but am rarely allowed to make to use the leftovers after a dinner of fajitas.  OH objects to the non breakfast bits like fried onions & peppers and that I am also using up the leftover bits of meat - chicken, pork or beef - even if I'm only doing it for myself.  Apparently these things are not meant for consumption before noon. 

    He's a lovely bloke in all sorts of ways but in others a complete fool!!!

    Made the family sweet and sour chicken with rice tonight, 3 yo grandson thought it was ‘yummy’, I had some eggs and high meat sausages

    Sheppards pie tonight, using lentils instead of mince for the vegan version. That should last me several days.
    I also have a chocolate orange cake in to have with coffee for later. yum!

    Mince with various veg added in and having it with potatoes. Am using turkey mince as that's all I have mince wise. Will see how much there is, haven't added gravy yet in case I want to divide the mince to use for bolognaise just need to assess how much there is first.
    keeping it all gravy based should be enough for another meal regardless.

    Apparently it's escargot in garlic butter followed by austrian mountain cheese omelets.  Nabbed some mushrooms when I was in Lidl but have been tutted at so I guess those will be saved for breakfast.  Fine by me!

    Tuesday's banging headache turned into a day in bed on Wed - all I could do was lie in the dark and sleep. So breakfast / lunch / dinner was two crumpets in the evening then back to bed.
    Yesterday was only marginally better - with a pot noodle.
    Feeling about 90% today - popped out and got some essentials (milk and bread fairy had failed to visit whilst I was ill) and I think tonight might be the end of the curry made earlier in the week.
