    Burgers (beef for OH, veggie YS for me) in cheese topped rolls with curly fries and corn on the cob (YS).

    The defrosted bolognese ended up feeding all 4 of us yesterday with the addition of a sourdough baguette, which leaves the beans in the cupboard for another day!

    For lunch I’ve polished off the last portion of 2021 ratatouille that I found in the freezer, for dinner we are having chicken wraps with french fries and salad.

    Spaghetti carbonara (using YS eggs) with Quorn bacon for me and pancetta for OH. With peas and garlic bread.

    Coming in from lurking. 

    Huervos Rancheros (aka Jamie Oliver’s Mexican breakfast) for dinner with rice and black beans in the side. Serves 4

    1 diced onion
    1 diced pepper
    1/2 tsp dried chilli flakes
    fresh chilli if you’ve got some
    1 clove of garlic
    salt and pepper to taste

    sauté until the onion and pepper are caramelised

    add two tins of chopped tomatoes and leave them to reduce

    Crack your eggs (I do 2 per person) in to poach in the tomato-y stew. 

    Once your eggs are cooked serve with rice/tortillas/wedges (and maybe some grated cheese).  

    It makes for a pretty cheap and quick dinner out of store cupboard stuff. It tastes lovely.

    I had pizza as it needed eating. Others had steak that had been in freezer for a while, with broccoli, baby potatoes, onion rings  mushrooms and coleslaw.

    I had this Roast Savoy cabbage with lemon recipe | BBC Good Food



    which was delicious and cheap as M*rks are selling Savoy cabbages as part of their value loose range at the moment.

    I ate it with this Focaccia alla Barese from Nick Malgieri which was a slightly weird method but came out beautifully.

    Thank you for the introduction to Nick Malgieri, @goldfinches. He has some delicious-sounding recipes.

    Tonight I’m using up the last of the stripped roast chicken and a few peppers to make fajitas.
  • Chicken and mushroom curry for us tonight, with turmeric rice, garlic naans and mini samosas. All out of the freezer.
