I made an aubergine curry and rice. The first time I've made anything with aubergines but without tonnes of oil. It was delish!0

I had macaroni cheese that I had left in fridge from Sunday for dd, husband had lasagne from freezer (he actually had two portions as they were small for lunches) served with salad. We shared a bag of maltesers with a cup of tea afterwards.0

DD is at granny's, so I think I'll feed DH some butternut squash and white bean chilli from the fridge and try out my first Huel (protein shake) as a meal replacement. I got it super cheap through a referral, it's vegan, and will really help me stay on track on nights like tonight when I won't get in until 9.30pm after CrossFit! Not very OS hehe!0

We had a lovely meal yesterday, made even better by DD's news, she has been accepted for Nursing - very proud of her as she was a nightmare at school and left with very few exams and has spent the past few years getting qualified to get what she needed to be a Nurse - sorry blathering on
Dinner tonight, LO salads and a Spanish omelette to use up some veg lurking in the fridge
