    Found a portion of pasta in the freezer so had that when I got in from the gym - creamy tomato bake sauce with HM meatballs in it. Added some sliced (YS) courgette and some (more) grated cheese on it. Nom nom.

    Stir fry tomorrow - its about the only way I can get OH to eat veg.

    I put a jar of Aldi sausage casserole mix in a casserole dish and the sausages on top, the tops of the sausages browned as they cooked.
    Along with a dish of potatoes layered with onions. That went in the oven and we went out with the dog whilst it cooked. Served with cabbage, shredded and stirfryed courgette and carrots. I had leftover cauliflower cheese from yesterday.

  • Feeling 'coldy' today which might just be an excess of pollen from yesterdays sun so I don't feel like cooking! therefore lunch will be some stew and dumplings from the freezer and supper will be a pasta bake made with some of yesterdays pasta sauce, the rest will be random and free form!

    OH has requested stir fry be bumped to tomorrow so not sure about tonight now - I actually quite fancy a burger but I'd better get the mince out the freezer asap if I'm going to do that.

    Mince made two burgers - used some orange and cranberry stuffing mix as breadcrumbs - yummy! Got another one left to cook. Had that with some mini hash browns (YS) that have prob been in the freezer since the last ice age taunting me, and some courgette / green beans (also YS). Actually given the mince for the burgers was YS it's been a full on RTC dinner :money:
