    I made a vegetarian version of Thomasina Miers' recipe for leek, cheddar and pancetta puff pie where I swapped the pancetta for sun-dried tomatoes and ate it with sweetcorn, green beans and petits pois all from the freezer.

    ETA: Sorry, forgot to say, @C_J - thanks for your suggestion which I will try the next time I wrestle with my jar.

    Sixth Anniversary 100 Posts Name Dropper
    Not been too bad in terms of trying to eat well recently. Friday is food shopping day - we had stuff to use up - then sat we had lasagne (was meant to be for Sunday but the date was too short on the mince and I couldn't face the freezer battle) so swapped my plan about and had chow mein (plenty left for lunch today cold too) and tonight is chicken thighs in a traybake with mushrooms, courgette, onions, and peppers, with couscous, houmous, and pitta. Should leave plenty for tea tomorrow, too. Into the danger zone of the week - Tues and Weds where I lose all motivation for cooking, but I have some leftover cooked beef in the freezer, some ciabatta, and plenty of potatoes for wedges. Hot beef baguettes it is for Wednesday then! Hopefully with some leftover mushrooms and definitely some gravy and onions. Now to set a reminder in my phone to take that beef out tomorrow...Love seeing people's plans, really helps me think outside the usual.

    Picked up a massive haul from the community fridge yesterday, almost all of it from Hello Fresh. If they are ditching this much perfectly edible food (tins of coconut milk, bbe 2023!) it does make me wonder how long they are going to stay in business.

    Anyhow - I’ve made a mushroom, cauliflower and spinach coconut curry for dinner tonight. I’ll turn some of the sweet potatoes and red chilli into soup for lunches, and luckily I have freezer space available so I’ll process most of the other veg (red peppers, onions, cauliflower, broccoli, garlic, chillies) and get them in there today.  Bags of kale and chard were fed to my hens, who thought it was their birthday!

    Last night was the end of the salmon, asparagus and pea risotto I made - chucked in some more wine and some fried mushrooms which seemed to wake it up a little.

    I have some mince out of the freezer tonight to make some kind of spag bog type thing and an Olio no duck wrap for lunch so that's sorted.

  • Chops and rice. Slightly sparse on veg at the minute, but got some nice fruit, so will make a nice fruit smoothie for pudding to make up for no veg. Pea and ham soup for lunch

    There's talk of meatballs for dinner.  Presume they will be in tomato sauce on pasta.

  • Got a large portion of mince out of the freezer yesterday - half will be bolognese for tonight, the other half I will turn into savoury mince for a cottage pie later in the week (or put back in the freezer).
