They were from me from the cook yourself thin book which is fab, I loved them and the rest of the family did too, mexican burgers tonight and tomorrow chicken tikka masala with fragrant rice....
Serves 2 526 calories per serving
    For the marinade
1 tbsp tikka masala curry paste (they sell it in Asda)
    150g 0% greek yog
2 free range chicken breasts cut into pieces
    salt

    for the sauce
1 tbsp tikka masala curry paste
    1 onion chopped
    200g passata
200 ml tin reduced light coconut milk (they sell tiny tins of them now 45p in waitrose saves wasting the rest)
    1 tsbp 0% greek yog
    chopped coriander

    for the fragrant rice
    100g basmati rice
    5 curry leaves
    salt
    1/2 tsp mustard seeds
    1 cinammon stick
    a pinch of saffron optional

leave the marinade overnight in the fridge

220C bake 10 mins just for colour as chicken will cook in the curry.
Heat curry paste in pan, sweat onions for 5/8 mins, add passata and coconut milk and bring to the boil. cook slowly for 5 mins or until chicken is cooked, finish by stirring in the yog and coriander.

    To make the fragrant rice
add rice, salt and the aromatics to a pan with enough water to cover the rice by 1cm. bring to the boil for 8 mins, the rice should have absorbed most of the water but still be a bit wet, cover and put to one side for 10 mins for the rice to absorb the rest of the water.

A ready meal version can be 840 calories, add half a naan, a bhajee and a couple of beers and you're pushing 1,500 calories:eek: this is a healthier, less calorie version

Then for lunches I am going to make tuna and flageolet salad, egg and cress samdwich on rye bread, smoked trout and beetroot salad from the cook yourself thin book and the dessert one of them this week is going to be their choc cake made with raw beetroot!! but I bet the kids will love it if they don't know what is made of!!

  • Afternoon everyone :)

serendisglair and victory, I hope you are feeling better soon :)

I'm off to get weighed soon and am slightly nervous that I'm going to be disappointed after last weeks big loss! I think I'd be grateful for even 1/2 a pound :D

The Dragon try not to get disheartened. As a newbie to this thread I'm not sure about your history, but as long as you're doing the right things, the weight will shift eventually :) Just hang in there and keep up the good work :)
  • Dragon - I vaguely remember something in my Dr. Phil book about weightloss resistance due to medication. I'll have a wee look at it later and let you know what he says.

In the meantime, stick with it. Have youthought of any ways you could make small changes in your eating habits - more soup, more protein (both increase your sense of satisfaction without hammering you with fat). Even small amounts of exercise helps. I've actually kept an old copy of Readers Digest with small changes you can make on a daily basis that make a huge difference to your weight in the long term. I must look that up too and post some ideas from it.

Off for WI now, be back later.
Goal for 09: Get fit and foxy. target weight 11st. 5/80.
Get out of dead end job and work for career I always wanted.
