Taco Fajita seasoning

Up till now I have bought Dinner kits for these but am sure with a little of your help I can do without and make the spice mix by hand.
The wraps I can get cheaply and meat and veg I can sort but its the little sachet spice that you mix with the meat I just dont know what to use.

I loooove Mexian food & have not been able to re-create the spicy flavouring even when following the list of ingredients on the packet so I buy the sachets of spice mix, expensive at about 70p each but often on BOGOF or similar, a compromise on the "kits" & oh-so-nice! The salsa is easy to make yourself, just chopped tinned tomatoes, garlic (fresh or dried) chilli (powder or flakes work better than fresh in this) & minced onion : Mix together & heat to release all the flavours then allow to cool.

I'd have a look at the ingredients list on the box and replicate it with spices I have at home, plus you get the benefits of not having all the added "chemicals" in it :)

Funny you should post this, we're having it for tea toinght.

I've got the side of the box ripped off and put in my recipe book but I think it is something along the lines of 2 tsp cumin, 2 tsp oregano, 4 tsp chilli powder, 4tsp paprika. Obviously just increase or reduce this ratio until you get enough for what you want.

If you want to make it *really* hot add 1tsp of crushed chillis (in the spice isle) or add some chilli's with the peppers.

Just need a really good recipe for HOT salsa and I'm away.

My husband does most of the cooking and we all enjoy Mexican but have not bought the dinner kits in years. He stir frys the chicken/meat with onion, in small pieces in a wok with 'NOEL'S' blackened cajun seasoning. We have a large jar don't know prices or anything but we've had it for ages and still lots left. Think we got it at Cosco?.

Schwartz make a Caujan Seasoning too, about £1.70 and a jar lasts ages. However Caujan is a southern American flavouring (think Lousiana & especailly New Orleans so spicy French-Carriberran mix) not Mexican so not very authentic for Tacos etc. Great for spicy potato wedges, fried chicken, spicy beef etc with sour cream though:D

That spice looks interesting. I found a cajun blackening spice listed Here

    Is that the same thing?

Funny you should post this as I have only just started making enchiladas without the kit......and I am very proud of myself, hehe!

The week before last I bought Asda's tortillas for 98p and a pack of Old El Paso Enchilada mix, for 68p, but to be honest I found the sauce a bit sweet. So last week I made my own with passata (I think I used that with the packet of dry mix the week before too) and spices from the cupboard - chilli powder, cayenne pepper and cumin, and black ground pepper. And it was lovely! It was actually more like the whole enchilada kit you get than just the dry mix packet for some reason??

I used to use a lot of jars and packets and just add my own herbs and spices to make them more interesting, but now I use passata (64p for Asda own brand, but only 34p for their Smart price one and it's exactly the same, just not such a pretty label!) for just about everything with my own herbs and spices.

One day I might even get round to making my own passata! ;)
