Afternoon all,
Anyone got any ideas how I can season tacos or burritos without the help of "old el paso". The speciality of the house is chicken and red pepper tacos - but I'd be much prouder of myself if I could make them without the help of a sachet!

1 - 2 Tbsp. minced onion (dehydrated type)
1 Tbsp. chili powder
1 tsp. cumin
1 tsp. garlic salt
1/2 tsp. oregano
1/2 tsp. cornstarch
Mix spices together and mix into 1 lb. cooked meat. Add 1/2 cup water, stir.
Cook on 'low", covered for about 10 minutes.0 -

Hey everyone,
I'd like to make some fajitas next week but I'm not a great fan of the packet seasoning and/or jars that you can get, I much prefer the taste when the sauce is freshly made - does anyone have any recipes for this?
I've had a quick look on the BBC site, but I can't find anything...

Carribbean all-spice
chilli poweder
bit of cumin
bit of ground corainder
and lime juice

Here's my recipe for fajitas that I gave my mate when he told me that he uses ol el paso spice mix and loves fajitas.
1/4 cup beer (not lite beer)
1/3 cup fresh lime juice
1 tablespoon olive or canola oil
2 large garlic cloves, crushed
1 tablespoon brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon minced fresh cilantro
1/2 teaspoon ground cumin
1/4 teaspoon red chili flakes
salt to taste
cut your chicken into strips, put them in the bowl with the marinade and leave it in the fridge for 1-3 hours.
get two large onions, cut them into rings, 2 bell peppers, cut them into strips, stir fry them for about 3-4 minutes. Sprinkle some salt over them when they are done
Flour tortillas
Easiest thing in the world to make
3 cups of white all purpose flour
½ tsp of salt
1 tsp baking powder
½ cup of lard or vegtable shortening (if you can't get a hold of some lard just use vegetable oil)
1 cup of hot water

We have fajitas a lot in our house - well, any Mex food - it's DD fave food (she's only 4, too). I just use some ground cumin, ground coriander and some garam masala(!) and some fresh lime juice. About a tsp of each dried spice, but it's up to your taste.
Mmmmm! Make sure you make your own tortilla chips too - lightly brush a flour tortilla with olive oil and bake for 5 mins in a hot (200 degrees) oven. Delicious!0 -
I very much like the old el paos fajita kits, but have started to not bother buying the box sets now and just buying pakects of supermarket wraps.
Does anyone have a good recipe for the spice mix, as I can't seem to replicate it and thus have to keep buying it,

You can buy just the packets of spices.
I do. I know that if I mixed the spices by myself it wouldn't be the same.
The packets of mix are about 69p I think - not too expensive in my opinion.
I'm sure someone will be along with a good recipe thoughSometimes it's important to work for that pot of gold...But other times it's essential to take time off and to make sure that your most important decision in the day simply consists of choosing which color to slide down on the rainbow...0
