    I thread mine on a string (cotton) and then hang them across my kitchen window till dry. Then I move them out of the window and hang them off a hook in the ceiling :) Look pretty too...

    I thread mine onto some fine wire, dry them, and they keep for ages.

    On a similar note can you freeze lemongrass? Never sure with this.

    Or wash, dry, then put into a small jar with some oil & keep in a cupboard

    I've frozen it and I've never had a problem with it. It sometimes goes a bit softer but as I'm cooking with it it doesn't bother me. I don't use it that often and if I leave it in the fridge it shrivels to nothing so if I stick it in the freezer then I have some when I need it and I'm not wasting money :)

    I pickle them.

    Boil up white wine vinegar, sugar, some coriander seed and a few bay leaves. Slice the chillis vertically after rolling them between your hands to lossen the seeds. Deseed with a spoon and rinse with boiling water to clear the last of the seeds out. Then pack them into a sterile jar and pour the vinegar over. Leave them about two weeks before either using them in recipes as you would normal chillis or eating them with a few beers.

  • thanks for all the suggestions! I finally got round to picking them yesterday - 75(!!!!) and still loads of green ones (3 plants). I have frozen half and put the other half in oil. I will try out some of the other suggestions when I pick my next batch - can see I won't have to buy any chillis at all in the next year or so .....
