    The Turkish home preserving technique for chillies is to put a knot in a piece of string, then start with a needle threading them on one by one. You push the needle through the green stem bit (not piercing the chilli itself), and just make a long length of them. You hang this somewhere warm and dry (looks a bit decorative too), they dry out, you pull them off and crumble them into whatever.

    Hello

    Does anyone know the best way to preserve fresh chillies, please? I bought a pack for 6p but don't need them for a while, can I freeze them whole? Or can I preserve them in olive oil and make a nice flavoured oil at the same time?

    You can do both:D

    I freeze whole chillies then take them out to defrost as and when I need them.
    If you want somebody you can trust...trust yourself :cool:

    De-hydrate them and bash em up in a pestle and mortar.

    Always taste better than shop bought chilli powder!

    Wow! I thought I got a bargain when I got half a kilo of chillies for £1! I dried some of them by warming an oven (fairly low heat) and putting them in with the door ajar (to let out the moisture). They aren't totally dried out, but are lasting a lot longer than they would have otherwise.

    The whoopsied chillies I had were simmered gently in olive oil for about 30minutes. Strained and put in a small jar.
    Gave some to my nephew who drizzled it onto pizza...
    boy it was good and boy it was hot.

  • Great ....This is my first years harvest and I was wondering how to preserve them.I will try all suggested methods.That vodka should have a kick !
    Re keeping the plants - should I cut them back or leave ? They are rather spindly.

    got loads of red chillies drying on my windowsill which have been home grown by hubby over the summer.
    they're dry, crusty and i now haven't a clue
    a) how to use them in cooking
    b) where to store them
    c) how long they'll be useable

    there must be an expert out there dying to help me out !!!! PLEASE;)
