    Mushrooms!! Talk to me! Bought a big bag of reduced- don't fancy mushroom soup what else could I do with them that's ncie and simple! X

    You could just slice and freeze and then grab a handful whenever you cook stews, mince etc. They're fine used like that.

    Mushroom risotto should work well but think you'd need something well flavoured with it as well.

    You could try this recipe by Jack Monroe (https://www.agirlcalledjack.com):

    This simple, delicious mushroom casserole is perfect easy comfort for cold evenings. Serve with a heap of fluffy mashed potatoes, or atop some plain rice, for a delicious dinner.

    Serves 2:

    1 onion
    2 fat cloves of garlic
    400g mushrooms
    2 tablespoons oil
    a fistful of fresh thyme or a shake of mixed dried herbs
    100ml red wine
    1 x 400g carton or tin of chopped tomatoes
    1 chicken or vegetable stock cube

    Peel and finely chop the onion and garlic. Gently clean any excess earth from the mushrooms with a clean tea towel and break them up, or slice them.

    Pour the oil into a medium frying or saute pan, and add the onion, garlic and mushrooms. Pick the thyme leaves and scatter on top, and cook for 10 minutes on a low heat to soften the onions and garlic.

    Pour in the wine, stir in the chopped tomatoes and crumble in the stock cube, and bring to a bubbling boil for 5 minutes. Reduce the heat, cover and simmer for 1 hour. (Alternatively, to use less energy when cooking, blast on a high heat for 10 minutes, stirring constantly to prevent burning and sticking, then remove from the heat, cover and leave to stand for an hour – which will meld the flavours together and thicken the sauce without using so much gas or electricity. Simply heat through before serving.)

    You don't need to use the red wine - just leave it out and increase the stock if necessary and obviously use Frylight instead of oil.

    Change of plan for me as we ate breakfast quite late so was a brunch instead. New plan:

    Brunch: fry up
    D: stew pasta bake thing (2.5 syns per portion and 0.5 hea for cheese) with roasted carrots
    Snacks: fruit, team with 0.5 hea milk
    Heb: 2x HiFi bars and not sure what for other syns at the mo

    Off to make some overnight oats for breakfast tomorrow

    Having an ugh day today. Not ill, just not wanting to go to work tomorrow :rotfl: Doesn't help that the baby was up 8 times last night and I am not coping with that little and broken sleep :( If he does that again tonight I may cry :(

    Went out for lunch for hubby's birthday. I did not resist the garlic bread and to cap it all they appear to have changed the recipe of the pasta so the gorgeous thing is only nice and I feel like I've wasted syns :(

    My dad, who doesn't comment on these things, told me at lunch I was 'looking well'

    What I should be doing now - getting everything ready for the morning.

    What I'm actually doing - sitting on my backside surfing the net because hubby is napping (toddler was up too so we both had a rubbish night) and I can't shower without him up, or cook the mini quiches I want for work as then I can't supervise the kids, and I also need to sort out mine and baby's clothes for tomorrow, which are in the bedroom with sleeping hubby. It all seems far too complicated for my liking!

    Homity pie for tea - leftovers from the freezer from last time I cooked it as I have no energy to cook properly even if I could get in the kitchen to do it.

    And there ends my grump (or at least what you lovelies have to put up with of it) :rotfl:

    This will be my Monday menu plan....:cool:

    Breakfast. All bran flakes A/B. Clementine x 2

    Lunch. Soup ( 1onion 1leek 2 carrot 4 celery, 1 potato, lentils) 2 ryvitas and spread half of B plus 2 Syns. Selection of berries.

    Dinner. Double egg & s/w A cheesy wedges. Beans Apple.

    Supper. 2 Ryvitas other half of B +2 Syns options hot chocolate 2 syn

    A milk B cereal A cheese B 4 Ryvita dark rye
    6 Syns
    Water, NAS Vimto green tea.

  • Yesterday was a bit of a struggle. I had to go for a mammogram and ended up with a visit to fish shop. I had fish and mushy peas with a couple of stolen chips but left most of the batter. The rest of the day was on plan though because we were full we had a picnic tea with sandwich (heb) cherry toms, carrot sticks.
    I'd better get a loss this week!
    My consultant text yesterday to say she knew how it felt when you didn't feel your efforts are being rewarded and that I can see her at class for a 1:1. I thought that was nice.


    Think of the fish and peas as reward for getting checked out. ;) It sounds as though you have a thoughtful consultant Matron. Hope you get the result you are hoping for this week.
