Eating out of the freezer and cupboards challenge - part two

Went to asd@ last night for bread and milk but came back with chicken filits, chicken roll for the freezer and a load of reduced salad and veg for the fridge. Hubby got out home grown sausages yesterday and made an amazing toad in the hole. Left over batter will be for pancakes for pudding after our 10p stir fry tonight.House purchased November 2013

Last night I had the split pea dip I made at lunchtime and I made both rolls and bread in the end so had a roll with it and aubergine cooked with mint. Also had split pea dip and roll for lunch..
Today I had one of the dreaded frozen portions of hm soup with added peas and dukkah on top to make it bit more tempting and another hm roll.
Quite full from lunch as don't normally eat hot food till evening, but might have small portion of the pasta/pesto/aubergine combo tonight as that needs using up. Got 2 portions worth left of all those ingredients so prob use it tonight/tomorrow so I can start a new week of meals Friday when the veg box arrives.
Wonder how much nutrition is in a portion of hm soup from so long ago... can't wait to eat fresh every meal or at least if I freeze things to eat them within a week or so. I'm still currently buying loads of fresh veg each week though to have with the odd frozen thing. I think I have 2 portions of soup left in the freezer, 2 portions of veg curry and 1 nut cutlet, apart from the various bits of fruit & veg in there so at least meal wise I'm almost cleared out.

In to freezer - bag of spinach.
Out of freezer - HM Veggie pie + 2 muffins.
Quick meal as I had been out babysitting. We had HM mashed potato cakes + tomatoes + baked beans + fried egg for dinner.

Home grown beef joint in the slow cooker this morning along with a packet of 10p carrot and broccoli and 10p sweed. Although I originally planned for it to do today and tomorrow looking and how much is in there I think it might end up being 3 days. Not sure how to stop it being repetitive?House purchased November 2013

used up some quorn mince last night and some veggies to make a casserole type thing and served it with lo wedges. was nice but wont pepper the wedges so much next time as i used black and cayenne chilli paper so they had a bit too much kick.

Ohhh they are great ideas mrs-moneypenny now for a dumb question....how do you make dumplings and pastry? Or did you have a different crust in mind?House purchased November 2013

to make dumpings
2oz shredded suet (i use vegetable but you can get beef as well)
4oz sr flour
pinch of salt
stir these dry ingredients together add 5tbsp of cold water and stir mix together using lightly floured hands divide the dough into 8 equal pieces and roll into balls. place on top of the stew or casserole for the last 20 mins of cooking time
rich shortcrust pastry
8oz flour
pinch of salt
4ox butter. cut into small pieces or you can cheat like me and use a rough cheese grater on it straight from the fridge.
3-4tbsp cold milk
mix flour and slat together in bowl rub in butter till it resembles fine breadcrumbs
sprinkle milk over and mix in with a round ended knife bladecollect into a ball and knead lightly till smooth.
cover pastry and put in fridge for at least 30 mins before rolling out.
roll on lightly floured surface use as required

^ Shortcrust pastry is really simple/quick if you have a food processor? I think the amount I use is 6oz plain flour, 3 oz butter, whizz into crumbs then add 3 tbsp cold water and the processor then puts it straight into a ball. Could reduce the amount though but I like some spare for other things. I don't make puff though, probably easier to buy it in a block..
Could also do a mash potato topping.0 -
