Kirri come out wherever you are! Did you get this months waitrose mag? Some good receipes in there, no freebies.
I'm losing the will here lol so not been posting much, scarily skint and having to eat freezer remnants! I've got a few corners turned down in the mag but most recipes I'm having to save as I can't eat parts of the ingredients
I did nip into Waitrose this week, got the new dukkah (it's not too spicy) to try with my hm split pea dip plus some frozen org veg which was on offer with the MyW card - I've been adding either frozen sweetcorn or peas to the hm soup I made year before last - seems more substantial with that in otherwise feel I'm eating babyfood.. Had a veg box delivery today too. Am meal planning just to use things up and also as it's getting harder to make meals I'm having to work from lists of ideas.. finally finished the paella rice (bb 2010) in risotto.
My bland meal plan over the next 2/3 weeks will include: chickpea & veg tagine, Greek stuffed pepper, grain/bean salads, more split pea dip and puy lentil based meals, hm bean burgers and pancakes from gram flour with root veg filling, will make more veg pies, veg pizzas with basil pesto, bread and fruit bread.
Need to find veg meals to use red lentils in as I have a whole pack - but can't do anything spicy or acidic so no onions, tomatoes etc - I can't think of anything I can make without those ingredients..0 -
Out today, pack of sausages for slow cooker sausage cassorole will serve with 2 packs of filled pasta and will have leftovers for another day which will put into freezer tonight.
Having a new kitchen installed in four weeks so trying to stock up freezer with meals that can be reheated in the microwave as will have no cooking facilities for a week xMFW - currently at £23,610 (Aug 2014) MFD 20200 -
Been too busy lately to do much posting.
However, out of freezer this week, sausages, leg of lamb - that was last night, 3 chicken carcasses - made soup. Today got out 3kg braising steak as I need to make several meals to refreeze, casseroles, steak and kidney, etc - should be a busy day.
Looked in my cake/pudding drawer - getting low, so need to make several cakes again, last time I did lemon drizzle, ginger cake, parkin, and coffee and walnut -I do them as a tray bake (Mary Berry) and divide into three and freeze individually, stands me in good stead for something after lunch or with custard as a pudding. I get 6 or 8 pieces per third of a tray bake. I do about 12 cakes at a time so in total it makes 36 days of cakes.
This time I fancy fruit loaves and I have some bananas that need using up as well as parkin which is always a favourite in this house.
I do use the freezers a lot for batch cooking. I find it easier and possibly cheaper to focus on one or two things at a time.
The braising steak - I'll cut half of it into pieces, slow cook with kidney and vegs, the other half I'll cut into larger pieces and have it as a piece of braising steak with vegs. All to be refrozen to make into steak/kidney pies or puddings, the braising steak in larger pieces we can have with more veg or casserole or chips. It should be turned into approx 20 meals which will be frozen. Tomorrow may get another 3kg pk out mince it, cook it and refreeze ready to make cottage pie, spag bol, or as a filling for Cornish pasties, I really do find it saves loads of time in the long run.0 -
