Eating out of the freezer and cupboards challenge - part two
Comments
-
Lunch - finished off the split pea dip with some of the bread I made.
Dinner - made some more veggie pies, same recipe as the last lot but just made 4 larger ones this time so had pie and watercress. Would have had more veg with it but when they came out of the oven I was too hungry to wait!
Pie filling:
Speckled lentils/Chestnuts/Vegan stock - cupboard
Carrot/Mushrooms/Cavolo Nero - veg box
Garlic/Bay/Thyme - from allotment in the summer & dried
Pastry:
Butter - freezer
Flour/turmeric - cupboard
I put a bit too much stock in so it oozed out the lid.. (already eaten one too!)
Also made some mini jam tarts out of the leftover pastry. Not supposed to have sugar but these are small..
Jam was made from fruit from the allotment.

They are like puy lentils supposedly, just not allowed to officially be called that, taste much the same but not quite as dark as actual puy lentils I've had before.

I've never tried them in a meat free meatloaf?
I usually use them to bulk out salad type meals to fill me up! but am experimenting more with them at the moment due to lack of other options.
Breakfast the usual banana, yoghurt and granola.
I had a cold mini pie and bread for lazy lunch..
Lazy dinner too, reheated one of the larger pies and had it with the last of the veg box watercress plus some of the Waitrose frozen peas/sweetcorn.
I found that the larger pies with a lot of stock were fairly 'meaty' and make for quite a filling dinner but that the smaller pies with not much stock were much better for eating cold as the contents were not soggy. I may have to keep experimenting.. might add spinach next time. I'd like to add onions or leek but don't think I can have either at the moment.0
