Very slow movements outwards at the moment - took a leg of lamb out 2 days ago and still eating that. However, I have a vast surplus of eggs at the moment so instead of throwing them away I've decided to make cakes and freeze them: made 18 so far and used 72 eggs. I have about another 150 - 170 eggs to go.

If anyone has any ideas of different ways of using a large amount of egg in one go - please let me know

    quiche
    Spanish ommelette
    pickled eggs
    scotch eggs
    scrambled egg for brekkie
    some in tuna niscose salad
    kedgeree
put some in a fish pie

Pancakes? Savory for main and sweet for pudding.

The latest list of items in the freezer

bread - mountain going down slowly
    peas
    mashed potato
    potato croquettes - 4 left
    tofu
    ginger
    [STRIKE]mushroom parpadelle[/STRIKE]
    [STRIKE]macaroni cheese[/STRIKE]
    vegetarian sausages - 4 left
home made veg sausage rolls - 4 left
    shortcrust pastry
[STRIKE]1 portion of quorn balti curry[/STRIKE]
[STRIKE]1 portion of green thai curry[/STRIKE]
    [STRIKE]broccoli and cheese quiche [/STRIKE]
    [STRIKE]a higgidy pie[/STRIKE]
    2 vegetarian curries

The two curries are new but made using the opened curry paste jar in the freezer that needed using up along with veg that needed using up. Each will be eaten with 2 vegetarian sausages.

I have a food delivery on Wednesday which will bring jam and butter with which to make jam tarts and coconut tarts with the pastry (dessicated coconut from my use up list), and coconut milk and palm sugar with which to make 2 green thai curries using the tofu and the use ASAP thai green curry paste.

I calculate that will mean I only have to eat 8 main meals to finally empty the freezer - so with the odd meal out and the occasional scrambled egg on toast meal and toasted cheese sandwich meal and a brunch using the croquettes means that the freezer should be empty during February. Have I mentioned the cheese mountain in the fridge!

 How did you end up with all those?
    Meringues
    Mayonnaise
Freeze as omelette and scrambled egg mix
Freeze as just whites or just yolks
    Custard

    Give me 100 :D:rotfl:

Out today came some prawn toast and samosas and king prawns. Nothing in.

    I have over 300 hens.
i didn't know you can freeze custard, I thought it may separate on thawing. Will try scrambled egg mix though as that is quick with very little effort - thanks
I made orange curd using concentrated orange juice instead of fresh oranges, cheaper, uses loads of eggs and freezes.

Out this week-end: fish pie, 2 x chicken kiev, 2 x chicken breast, potato croquettes, cheese.

In: 2 x tubs of raspberry and redcurrant frozen yogurt.

I can easily open the freezer drawers for the first time for months but there is still a lot of food in there. This month I have so far spent £79 which is less than half my usual spend. I aim to do February for less than £100.00.
  • Home grown lamb chop for tea tonight. Also got out home grown gamon to do tomorrow with my epic Orange glaze and a loaf if bread for sandwiches. Problem now is that we have run out of fresh veg (only have onions, peppers and a few potatoes left) and a packet of frozen green beans and the monthly shop is not due until next week. Think it will be a lot of pasta and rice unless anyone has any suggestions?

I liked them when I had them though haven't had any Quorn etc for over a year now. Have you tried these ones as an alternative? They are softer (sold in H&Barrett in the fridge).

  • Omg I am feeling a bit bad, went into Mr s, my bill was £1.61 for some sultanas, Greek yogurt and some pittas, I had £1.65 , I put all the money in or so I thought, the machine oddly registered £1.20 even though I had 3 5ps 1 50p and £1 coin, so I told the guy what happened and he gave me my 4p change, got home only to find the 50p in my pocket! Ooooops! Next time I go I might say sorry and give back the 50p.

I also got a whole chicken in Mr w, so I'm going to see how long that will last! Brought some reduced spring greens yesterday, so I'm going to roast the chicken and have with rice, I also have potatoes and pittas and bread as well as noodle and a few bits of veg, beets, kale, mixed veg and greens I'm going to see how many meals I can make from the one chicken.
