Thanks for the advice on runnerbeans. I podded most, but something went wrong trying to dry them out and the next day they were smelly, so had to bin. Since I have used the last of the seeds this year, bot going to bother again, not a big fan anyway. Going to do barlotti beans instead.
Struggling to find space for veg in freezer, had to take leg of lamb out yesterday (being slow roasted at moment).
So far in: marrow rings, chard, cabbage (shredded and wedges).
Out: Leg of lamb. hm lamb stock, lamb bone, barley and pea mix for lamb stew. Bank holiday camping: Half raspberry and lime traybake, half spiced tea loaf, 5 portions courgette and cheddar loaf, 2 large portions hm slow cooker pulled lamb shoulder, pork chops. For bbq lunch today: chicken thigh fillets and tiger prawns. For dinner tonight: hm courgette and turkey mince lasagne.
And thanks for advice on pickled cucumbers, got last of ingredients, so planning on having a go at making a couple of jars later today. Saw a J@m1e 0l1ver recipe that caught my eye and my sister asked for a jar already!It's good for the soul to walk with your soles on the soil.0 -
I'm on a mission. Freezer is fit to burst so we are eating from there until I have enough space to freeze meals, bread, cake etc, plus the Christmas boxes my Mum and I order. I've managed thus far but I know I am going to hit bored soon.
Taken chipolata sausages out as couldn't find the Cumberland ones (too tired to pull it all out again). Was going to do sausage, mash and gravy but wondering if anyone had any better ideas. They are pigs in blankets size and there are quite a lot of them! Feeding 3 but OH has quite a lot of things he cannot eat (skins, mushrooms, celery, corn for example). I can normally manage to adapt to suit but am fresh out of ideas for meals.

Small sausages make great mini toad in the hole. Just mix up your batter in the usual way. Pop the sausages into a normal fairy cake tin with a spray of oil and heat in the oven on high for a few minutes, just to brown the sausages and heat the oil up. Pour the batter over and back into the oven for about 10-15 minutes until the batter is cooked and risen.
Serve with mash and veg. If your OH can't eat the skins then just pop the sausages out of their skins before putting into the oven. When I do this we usually have 2 or 3 each but obviously could have more if you wanted. I've never frozen them but would think that if there are too many they would freeze OK.

The turkey and courgette lasagne will be had today, between the roast lamb and bbq, neither of us hungry enough last night.
In this morning: hm lamb and barley stew. Hm oven roasted cherry tomatoes.
Out: few handfuls frozen peas and sweetcorn, brown rice, stock, for courgette and rice soup.

In: box of HM leek and potato soup; 2 pieces of smoked haddock
Out: frozen mixed fruit later to make overnight oats for tomorrow's breakfast

I haven't posted for a few weeks as life has been just too busy to even be able to turn around and I still have to do the VAT for this quarter so burning the midnight oil is looking attractive at the moment.
Just caught up with the posting, makes Interesting reading, quite a lot of ideas.
Today
In:- probably rose hips, to soften before I make marmalade with them
out: chicken wrapped in bacon,
On the freezer and cupboard front:-
I defrosted one of the large upright freezers
I found about 3kg of livers, all sorts, and all labelled, chicken-turkey-lamb-venison-and a small amount of beef. I went on YouTube and found a simple recipe for pate. Surprisingly (or not) I had most of the ingredients but bought the required amount butter and cream needed and set about making the pate. I portioned and froze it so there should be enough to last to for quite a while, to probably after Christmas - and surprisingly - I labelled it as well.
The above freezer now contains all home made/cooked things - pate, cake batter, biscuit dough, ice cream, a lot of meals with mince (all sorts of mince) or chicken/turkey as a base. The two shelves that do the quick freezing are still empty, the drawers are full but I feel more in control.
So it's onto the next freezer - when I have time - This one I want to use for things I have grown or gathered around the place. at the moment I'm collecting rose hips, blackberries plus stuff from the veg plot. Question - has anyone gathered beech nuts and how did you use them? Our beech trees have a tremendous crop this year and I want my share before the squirrels get there.

Yesterday got out pack of sausages for breakfast this morning and tomorrow morning - we always have a fry up at the weekend but nothing in.
Today out: lamb cubes which cook from frozen, grated butternut squash which I defrosted to use in the lamb dhansak I'm making
In: later - hopefully 4 portions of lamb dhansak. The dhansak is currently in the oven slow cooking. Will add a tin of chickpeas later to stretch it from 4 portions to 6 portions!

Out: hm sweetcorn loaf. Twice baked tuna sweetcorn jacket potato.It's good for the soul to walk with your soles on the soil.0
