Eating out of the freezer and cupboards challenge - part two

In: blackberries and deseeded rosehips
Out:- portion pate, gammon joint.0 -
In: home smoked haddock pieces; home smoked bacon (DH to slice this later and then I'll bag up and freeze); divided up a carton of passata last night and frozen in silicon muffin pan, now frozen and into bag and back into freezer - when I only need a small amount I always freeze the rest of the pack in approx 100ml "pucks"; I do the same with coconut milk as I never use the whole can!
Out: Spanakopita for lunch; sausages for dinner; chicken for dinner tomorrow night
I'm going to cook a gammon joint today and will get DH to slice that this evening too; it can then be used for sandwich fillings, lunches etc with salad.2 -

Out 4 sausages, rest of a bag of frozen fruit, small bit of ice cream to finish the tub.
DH left 2 of his sausages wrapped in bacon plus a slice of bread with the comment 'You can recycle those tomorrow' (he was thirsty not hungry) I'm thinking - flan? Any ideas welcome.
Bread will go to Gertie the goose, her treat tonight was the outer leaves of a lettuce.
My fridge is becoming quite full with bits and bobs leftovers from the last few days. So for the coming days I must try and use as much as possible.0 -

What is - Spanakopita?0 -
@zafiro1984 - yes we do. The bacon is to die for and takes just seconds to cook - we had the odds & sods in a sandwich with some mushrooms for mushrooms this morning! This is the first time we've done haddock so no idea what that is going to be like but I'm sure that too will taste nicer than shop bought.
We've also done smoked salmon, which again is really nice but usually forget it's in the freezer! However, none at the moment. Waiting again for a special offer on whole salmon in one of the SMs - then we usually smoke one side and portion the other side.
Haven't tried smoked eggs; not actually sure I'd like them! Smoked custard tarts are a definitely no - I don't eat pastry!
Spinakopita (sorry I misspelled it before) is a cheese and spinach pie made with filo. It's usually ricotta and feta cheeses but I didn't have any ricotta so substituted cottage cheese, which in turn reduced the calorie content. Have to say it doesn't freeze very well as it dries out when frozen so in future I will just make up half recipe to eat on the day.

Out: chicken breasts; bacon; sausages - all for meals tomorrow
I'm making a beef casserole this afternoon so no doubt some of that will find it's way into the freezer tomorrow!

That has inspired me to start the smoking again. What wood chips/sawdust do you find the best. We never buy them but we do have oak, apple, holly and beech logs so it would take DH just a couple of minutes to make the sawdust. I suppose I should google it.
I rather fancy doing the smoked salmon pieces. I usually buy my fish wholesale and freeze it as it works out a lot cheaper - I'll have a look and see what I have in the fish drawer.
bacon - umm. you really have set me thinking about what I could do, I rather fancy trying cheese!!!
Yesterday
Out - 3 x mutton chops, plus 24 sausages and 24 slices of bacon
In today - partly cooked sausages wrapped in bacon - the chops are for tea today.
The temperature had dropped hugely so I lit the Ironheart yesterday and cooked the sausages and chops in it so it should only take a few minutes in oven today to finish off the chops - a nice quick tea.

@carinjo - bannock bread? what's that? sounds interesting.
@zafiro1984 - we usually use oak for smoking, particularly for salmon. The bacon this time was a combination of oak and cherry. Have only used the bits from the ends so far which didn't slice properly and they were lovely in a sandwich. We buy our sawdust from ProQ but if you have access to woods to make sawdust would be so much cheaper and very MSE!

Not posted for a while, actually did an audit of what I've got in my freezers (lot of stuff I didn't realise I had, and they're at least more organised now)
In: more blackberries, 2 large ducks, belly pork, l/o chicken curry, bread
Out: lamb for curry tonight, 2 portions dim sum, chocolate icecream, rosehips, meatballs, feta, small portion stew (taken for lunch in the office on Friday).
