Eating out of the freezer and cupboards challenge - part two

    Used up three pieces of frozen chicken, which I roasted and we had it with a combination of fridge and garden salad. No dessert, but I made some more courgette soup with the pickings from the garden.

    Courgette apocalypse approaching, My go-to meals are soup, baked, grilled, rat'd, curried or added to ragu. I might try tart this year. With 7 plants we will be giving loads away too

  • A fish fillet from freezer, eating last sausage for lunch, still more in freezer but thats OK, I cook in oven, freeze in 2's so easy to zap when needed. Not sure what veggies to have, usual peas but maybe spinach from freezer, jusy remembered I have carrots in freezer too, will get another square of cake out of freezer for pud. Put 2 small pork tenderloins in freezer on Tuesday so will get 1 out for tomorrow and l/overs, want to make a mince (freezer) meal on Sunday, no doubt some will go back in.

    I also spiralise courgettes to have as a low carb version of spaghetti.

    Courgette and lime cake is really good too!

    Ooh thanks for that - I don't have a spiraliser on the basis that all my kitchen drawers and cupboards are full at the moment, but I might just need one...

    Love the sound of the cake - do you use the Nigella recipe?

    Well when I grandly say "spiralise", I actually mean I use a small julienne peeler to make long strips of courgette. I was given a big spiraliser when they first came out but it took up too much room so I passed it on to someone with more cupboard space!

    The recipe I use for the courgette and lime cake was given to me yonks ago by a friend, but it's pretty much this M&S one:

  • Wells plans gone to pot. Fish was v nice and also riced the leaves and stalk of cauli so mixed in with other, added curry powder/garlic salt etc and then a few peas. Really good. Went out for lunch with dd and dgs so did not get pork tenderloin out thought would have something light, then neighbour asked me to go round and gave me chiclpea curry in marg tub and a large tub rice, so rice will be portioned and into freezer, the curry tonight with some of the cauli rice, I think there will be enough for tomorrow too. Seem to be fighting a losing battle freezerwise. Ah well.

    IN: 14 y.s.burgers, 2 packs 8 in each not full size, ate 2.
    OUT: sourdough baguette for burgers, 1/2 chicken for tomorrows dinner.

    4 Bread rolls out of the freezer for a cheeky burger (grill-steak) in a bun with fresh homegrown peas - simple supper. First attempt at courgette cake here today
