    In - nothing still!
    Out - Spinach falafels, Veggie Chilli, some frozen peppers.
  • Evening all.

    Just using stuff up today. I've had a smoothie, had chicken and chips, for dinner the last of the baguette, much prefer it baked on the day. Used the last of the fish stew for dinner.

    In the freezer went, 3 portions of Boston beans, 5 slices of meat loaf and 6 ice lollies in a mould, pineapple and peach smoothie.

    In to freezer - nothing.
    Out of freezer - pasty + muffin.
    For dinner we had HM Salmon Quiche + HM wedges + roasted red onion, white onion, yellow pepper, tomatoes. I tipped some of the yummy juice over my veggies. Of course tartare sauce was called for. I used Jerk seasoning on the wedges.

    IN to larder quite a few bits but only vegan spice burgers OUT of freezer, nothing in. Nut cutlets got a "gorgeous" from OH but he isn't impressed by these spicy soya fibre burgers at all. Null pointes.

    All this talk of crumbles and custards.. makes me feel hungry but I can't eat any of that. :(

    Ordered a cookbook today :)

    Recipe request please sharond101 :T I can get great filo pastry from Ocado and my veggie mother would like that.

    I made it up but it was really good. I chopped/sliced 1.5 red peppers, 1 red onion, 1/2 leek, bag of brussell sprouts (I steamed these for 5 minutes after taking outer shells and bottoms off and halving). Put all in baking tray with 1tbsp olive oil and roast for 25minutes at 200deg. Meanwhile make a tomato sauce by simmering a small finely chopped onion in 5 tbsp water until soft then add 1 tin chopped tomatoes, 1 tin drained cannellini beans, 1tsp balsamic vinegar, 2 tsps worcester sauce and 2 tsp red pesto. Mix veg into the sauce and leave to cool.
    Set out your filo pastry onto parchment paper so you have two sheets lying ontop of each other and to the side another two sheets slightly overlapping. Add filling mixture in a row about 2inches from the top of the pastry leaving an inch gap at either side. Carefully fold the pastry over the filling and roll up like a swiss roll. Roll into the shape of a spiral by bringing one end in approxiately2.5inches and continuing to roll it round. Brush with a mix of oil (I used the oil that settles ontop of the red pesto) and melted butter. Sprinkle with 1tbsp sesame seeds and bake at 200degrees for around 30minutes until golden.

    It looked and tasted amazing, I had another portion tonight. I just put it in the oven for 5 minutes and it crispened back up.

    That's definitely a novel way of feeding brussels sprouts :) Thanks for the recipe, mm am going to try that while OH off at Christmas thanks xx
  • Where is everyone??? Did you all go and do sneaky shops today an are too embarrassed to post??

    IN: Some mashed potatoes and vegetables for toddler
    OUT: turkey mince for dinner and 1 portion HM soup for husbands lunch
