    In to freezer - nothing.
    Out of freezer - smoked mackerel.
    We had HM Pie + roast potatoes/parsnip + cabbage/carrot/onion + gravy for dinner.

  • I just made a really nice dinner and I thought I would share about it, it was so nice.

    1 cup of orzo but you could use rice. I like to buy orzo rather than rice because I live on my own but tend to cook portions for 3 or 4 and freeze 1 and have 1 for lunch at work. Anyway I'm really phobic about re- heating rice and food poisoning, not so much if an issue with orzo as it's a pasta but looks like rice and tends to taste of whatever you put in it.

    1 small onion chopped up
    Some leftover carton of chopped tomato that was knocking round the fridge from something I cooked earlier in the week
    Some chopped black olives that needed using up they are already past use by date
    About 300ml stock. I just use a cheapo stock cube
    A big handful of frozen chopped peppers
    About 10 balls of frozen spinach
    1 chopped finely clove of garlic
    About 5 small balls of mozzarella - just sainsburys basics
    A shake of grated hard Parmesan style cheese
    A squeeze of chilli sauce
    Salt and pepper

    Bung in the slow cooker for 2 hours on high. Stir every now and then. It is absolutely bloody gorgeous!!

    Just made a small Victoria sponge, had all the ingredients in for the sponge and used some HM jam. I missed all the baking when I stopped buying eggs.

    For dinner we had some with HM wedges + cauliflower/carrot.

    Kirri that sandwich looks yum!

    I had a really nice roast pork, I went out late last night as I fancied some icecream, mr w was shut so went to mr s, I caught the dregs of reductions, got a pork shoulder £8.73 down to £2.14 bargain! cut it in 2 and had the smaller half today delicious, had it with some reduced broccoli which was 30p and the last of the spuds which were also reduced to 35p my meal must have cost 50p or less, because I still have loads left.

    Kirri I wanted to ask you about potatoes, anytime I buy some and put them in the fridge they seem to start sprouting, how can I avoid this?

    Potatoes store well at the 'right' tine of year - ie we dig them up as we need them over the summer but towards the end of summer we dig up the remaining to store, just in an unheated greenhouse in hessian bags, ie cool and dark (darkness stops them going green) and they will keep for ages but from early Spring ie planting time they will want to naturally start sprouting and growing so they have a natural expiry around that time. I've read the organic growers are much the same. I have a 'potato bag' (Lakeland) and keep them in the cupboard but they don't keep as well as the ones my mum stores outside. I've no idea what the commercial growers do though before they are sold, it's impossible to tell when they've been dug or how they are stored and they import them too so not sure if storage will be different.


    I had another of the toasted cheese and garlic tomato salsa sandwiches today, with the last of the salad bag for lunch. I'll need to buy more cheese for the burritos if I eat much more..

    Afternoon snack of a slice of the Victoria Sponge I made yesterday.

    Made 2 more loaves of seeded bread today so just had the fresh bread with a fried egg and garlic mushrooms for dinner.

    Just to add I got one big dinner out of it then fed another 4 people with it the next day with salad and homemade bread.
