Kirri I think you are going to love the burritos! the cheese gives it that extra pop!

I take it you've decided to make your own tortillas?

Yep, will have to make the tortillas, it's hard to find organic or additive free ones, they've nearly all got preservatives and E numbers in. I'll use this recipe:

    http://www.abelandcole.co.uk/recipes/thats-a-tortilla-wrap

It's quite knackering making everything though!
  • :)

Thank you, LOVE your pictures. FlorenceEM your bread looks heavenly (and I love the Waitflower! :rotfl:) and Kirri your meals look delicious, as if some gourmet chef has slaved over them and definitely not like they are pulled together from stock items. Dip looks especially lovely.

Really wish I knew how to make food that good:(
  • Went shipping Tuesday night and so have full fridge, cupboards etc. Had to go to a meeting with work and stay overnight Wednesday/Thursday so guess what the hubby decided to do for tea....get q domino's pizza Grrr

Home grown steak out for tea tonight along with some yellow sticker goodies.

In to freezer - HM Smoked Salmon Quiches.
    Out of freezer - nothing.
I made enough SC pastry for 2 quiches today and enough left for 2 more quiches or a pie.
We had HM wedges + HM Smoked Salmon Quiche + mushy peas - delicious.

    Out of the freezer today:
HM pizza base leftover from yesterday (don't think they freeze very well..)
    Portion of haloumi from yesterday
Portion of HG ratatouille from the summer (3 left..)

Added on more of the bought garlic salsa, dried thyme picked in the summer and added rocket and watercress when it came out of the oven. Really good.

Lunch was a pack of chocolate buttons :o

Also defrosted the freezer and updated the spreadsheet to see how things were going. Freezer is half empty now! Got about 30 portions of HG veg left, a few portions of part used ingredients which will be used this week plus the HG fruit (will buy vegan ice cream to eat with it). Not freezing any HG veg this year as will def eat 100% fresh when this has gone. Also want to up my salads intake and start buying more fruit.

Cheapskate scratch cooked meal plan this coming week:
Gram flour pancakes with last portion of the tagine I don't like
Burritos and/or bean & cheese quesadillas
    More pizza
Satay tofu, veg & rice (have coconut milk to use up)
    Grain/pulses salad
Bean dip, crudites or bread & salad

I honestly didn't realise tortilla wraps were so easy to make, I looked for another recipe, but it makes 60 tortillas I don't need that much, can you freeze the dough?

I've tried 2 recipes for them in the past when I did fajitas but seem the remember the Abel & Cole recipe being very good. I probably halved the recipe and just froze the second portion of dough but I can't remember too well. Says it freezes well though, I will try it this time.
  • Chicken breast fillets out of the freezer for fajitas tonight and also some smoked salmon to have for lunch.

Hubby has shown me how to upload pictures on here so I can show all you lovely people my cooking tonight.

Toasted cheese and garlic tomato salsa sandwich with salad for lunch. Need to make more bread tomorrow.

Hot salad type thing for dinner - puy lentils, mint, HG thyme, garlic tomato salsa, mushrooms and courgettes - and last portion of haloumi from the freezer. No frozen veg today thankfully :D
