Eating out of the freezer and cupboards challenge - part two

  • 4 chicken breast out if freezer for my tray bake thing I do with cuss cuss. That will be tea tonight and tomorrow. Fridge is bare, cupboards are getting there, freezer has about a draw and a half free. Going down to see my mum again on the 11th of April and will be bringing home grown meat back do in the next 2 weeks I need to make a real push - especially as I am due to do the monthly food shop tomorrow which will mean more stuff going in the freezer probably including yellow stickered bargains.

    I actually love not having much in, it's far easier to eat what I fancy picked from items just bought rather than what needs to be used up and I can eat fresher/nicer tasting food by just planning a week at a time :)


    MNR - I love the look of those burritos! I will have to amend the recipe a bit though to take out some of the things I can't currently eat but think I will be able to get enough flavour in despite that! Looks very healthy filling too with rice, beans, corn etc, I need to work out best quantity to start with.
  • Kirri they are SO good! and very handy, I have finished the batch I made last week, I will be making more this week though, the only unhealthy thing is the cheese really, but then you don't put loads on anyway, I used about half a pack of dried beans for 6-8 burritos, the first time I even made them without the chilli, cumin because I didn't have any and it was fine, when cooking the beans from dried, I just add garlic, a onion and a bit of seasoning. the rest is added in the actual recipe, try them, I urge you, by this thread, you can tell im a meat eater, I would gladly eat these all day.

    Today im having ackee and saltfish for dinner, with plantain and dumplins, cant wait.

    I really fancied them tonight but need to buy cheese and tortillas (unless I make the tortillas). I was thinking of cooking 100g beans (will try haricot as not got any pinto) and 100g rice for a first go and freestyle it a bit with the quantities!


    Had the last veg pies tonight with rocket, peas and sweetcorn. Still hungry..

    In to freezer - HM casserole/dumplings.
    Out of freezer - muffins.
    For dinner we had salmon + HM wedges + roasted courgette/red onions/white onions/tomatoes.

    Welcome to the thread, I love what you have written here. With many people struggling to put food on their plate it is unedifying that so much food is chucked away and often perfectly edible. I'm glad you are enjoying the way you meal plan now as well as the financial benefits. :-)

    In to freezer - nothing.
    Out of freezer - tub of HM pie + pack of smoked salmon.
    Made GCJ's Soda Bread for first time - yummy. Recipe says - semi skimmed milk but we have skimmed so used that.
    We had the soda bread with a waitflower meal.

    What's a Waitflower meal??


    Having to do lots of cooking just to create meals out of nothing. All meals are fairly cheap at the moment.. I am mostly buying just 1 item a week to use in meals ie either tofu, eggs or cheese, whatever pulses if any need replacing and veg/salad/fruit. Didn't want to buy dairy really.. This week's item will be a small bag of grated cheddar for the burritos. Don't normally buy grated but price was ok and will be delivered with the veg box along with oil and some veg - and some choc buttons :o

    Pics from last few days:

    Tue - Puy lentil, frozen HG ratatouille (looked quite good once defrosted yet I nearly threw this!) and added in some fresh salad/veg from the veg box and a small portion of haloumi. Very filling..

    Wed - Egg fried quinoa and bulgar, portion of the HG frozen ratatouille and some fresh salad/veg from the veg box. Had to use different veg from the recipe due to what I had in the fridge so wasn't as nice as usual.. and typically I made too much...

    Today - lunch was split pea dip made this morning (took pic half eaten, was starving :o ) with Waitrose salad and I made the bread the other day, had been in the freezer.

    Tonight I made another pizza - I used the last of the olive oil in the split pea dip earlier so had to put veg spread in the pizza base and it came out far too hard to roll out, won't make that mistake again! Shouldn't be eating tomatoes but had a craving so used the garlic tomato salsa that had been in the fridge for months - gorgeous! Added on another portion of frozen HG ratatouille (trying to use it up..), a small portion of haloumi and rocket. Got a second base which I'll probably have tomorrow and the 2 spare portions of haloumi are diced and in the freezer too. Can't risk wasting anything.
