    When I use plain flour instead of SR I use 2 teaspoons of baking powder and half a teaspoon of bicarb to 8 ounces of flour

    I make similar biscuits which are adapted from this Anzac biscuits recipe on BBC Good Food: http://www.bbcgoodfood.com/recipes/3803/anzac-biscuits

    I have tweaked the recipe as I found the original too sweet and a bit too 'coconuty'. So I halved the sugar and upped the oats while slightly reducing the amount of coconut. I also used half the amount of bicarb to avoid any bicarb taste.

    So I use:

    100g porridge oats
    70g desiccated coconut
    100g plain flour
    50g caster sugar
    100g butter , plus extra butter for greasing
    1 tbsp + 1 tsp maple syrup (or golden syrup)
    half a tsp bicarbonate of soda
    2 tbsp boiling water

    Then follow the recipe instructions as given. When the biscuits are cooked I sample one or two while still warm (quality control) :) - then leave the rest to cool and melt a little milk chocolate and dip one side of the cooled biscuits in this (to cover about a third of the biscuit) and leave the chocolate to set. They look good and taste great!

    i'm doing a batch in a minute for the kids lunchboxes but like josiebabie i find the raw mixture too tasty!
    Can these be frozen when cooked or would they break up, just thinking i could do a double batch and freeze some(tho they probably wouldn't be in there for long!).
    Twinks hobnobs must be famous by now - googled it instead of coming straight on here and they are being mentioned in other forums as well! Right off to make em and ruin my weightwatchers heehee

    After making Twinks hob nobs many times I have decided to try a bit of variation - used raisins the other day and they were lovely so have bought some blueberries to try.

    What do I do with the blueberries - just put them in whole or chop them or prepare them?

    I think if you chop them the juice will pour out all over the place, and you will have blue biscuits

    Chuck them in whole. They're likely to burst open a bit in the oven anyway.

    What would be the problem with blue biscuits? :rotfl:

    Hi dora,

    As CupOfChai has said, blueberries have a habit of bursting open when being baked so I prefer to add them directly from the freezer, as that way they cook without leaking into the mix too much.

    I'll add this to the main hobnobs thread later as your question may help others.
