  • Do you have to use bicarb of soda in this recipe? I haven't got any in the cupboard but if it is vital I will buy some.

    i think they have been made without but probably better with, but have a go anyway

    FINALLY got around to making these on Friday evening, and DH & the DSK's LOVED them!

    Only ? is - are you supposed to flatten them to kind-of biscuit-thickness before cooking, and then they spread out? If I flatten them less, would they be softer when cooked?

    DSS#1 wanted them softer (more like cookies I guess), but the others were happy with them as biscuits. I made 3 trays of 12, so wondered if next time I will flatten one tray less...

    yes you flatten with a fork before baking, if you want them softer you could make them thicker before flattening slightly or do them as a traybake, i havent tried that but that might be softer, not sure

    I forgot to add the bicarb once and they came out fine. Maybe a bit harder than normally, but still just as tasty.

    I've found that when cooking them, if I take them out of the oven just before they look like they're done (whilst still fairly pale in colour), they stay chewy and soft.
    If I leave them until they're golden brown, once cooled, they're crunchy.

    I made my first batch yesterday and they are great. I added fudge pieces to mine as I had some left over but to be honest I don't think they really needed anything extra. I only made half a batch, got about 15 large cookies. I took them out just as they were turning golden so they have a lovely, soft texture. Will definitely be making again

    My boys are missing their hobnobs. My new cooker is being installed as I type, so hopefully I can bake some later this morning, if I can work out how to use the blessed thing!

    they sound yummy katycocoa, if i was adding fudge i would have reduced the sugar a bit

  • just made some, but didn't realise i hadn't used sr flour until it was to late. I also added some vanilla essense they taste nice but a bit sweet

    First thing i've baked since i got kicked out of home economic about 17yrs ago hehe so quite pleased with the results
    I have dyslexia, so get used to my spelling and grammar :)
