    Heeey! Lovely to see you - I am still stalking a few who were around when I was still pregnant so hence my presence on here!! I am getting on fine thank you - but doesn't time fly! I miss my bump too and the people on this thread - it was my savour in the 2 weeks that I went over due! Today I make one of *Bigbird*'s raspberry and lemon cakes - and I haven't made one of those since the bump arrived!:) How are you and babe doing? x

    Luckily I copied and pasted it into word (as I wouldn't be able to find it again!) - so pasted below! For anyone who didn't see the original posting - this cake is absolutely lush and soooo easy - thankyou to *BigBird* for the original recipe!:T Just a MSE tip - I use Tesco Everyday value lemon curd at 22p - and its still absolutely lush!


    Raspberryand lemon curd cake (from Xanthe Clay's "Recipes to know by heart"book.

    Ingredients
    6oz/170g caster sugar
    6oz/170g soft butter
    1 tsp vanilla essence
    3 eggs, at room temperature
    6oz/170g self raising flour
    1tbsp milk, if needed
    About half a 450g jar lemon curd*
    A handful of raspberries*

    (I normally use a bit less lemon curd (about 1/3 jar, and a few moreraspberries)

    * Preheat the oven to 170C/325F/Gas 3. Grease and line a 8in/20cm cake tin thatis at least 2in/5cm deep.

    * Beat together the sugar, butter and vanilla essence until pale and the colourof clotted cream - you can do this with an electric mixer or in a foodprocessor.

    * Beat in the eggs one at a time.

    * Fold in the flour. Do this by hand or the cake may be tough.

    * Spread the mixture out in the prepared tin. Dollop the top with teaspoonfulsof lemon curd and scatter a handful of raspberries over the top.

    * Bake for about 40 minutes until well risen and golden brown. Cool in the tin.

    * Enjoy!

    I love this recipe so much As the cake rises, the lemon curd and raspberriessink so that you end up with almost fudgy lemon curd and raspberries inside.

    Hey Bambisbelle! You dont really have to do anything to join, whoever next does the lists will add you :)

    I made the raspberry and lemon curd cake about a fortnight ago, it is amazing!!

    Nothing exciting happening here, lost a few more little bits of plug and had some tightenings earlier but as ever it came to nothing!

  • Yay thanks IHateDida - have done a 'screen-print' so will make it tomorrow. If I remember rightly, some we're doing the mixture as muffins too but I'll try the main cake first. Hope Rosa is doing well and sleeping for mommy.

    No probs! Never made the muffins but I could eat a whole cake as its absolutely lush! I also made some chocolate brownies tonight (but added chopped up Cadburys Caramel bars instead of the choc bits!) - this recipe is scrummy if anyone needs to fill time (the brownies freeze well too - handy to give guests post-birth!) - http://www.bbcgoodfood.com/recipes/1223/bestever-brownies

    Rosa is doing really well thank you - I am sooo lucky - she sleeps from 7pm until I wake her at 11.30pm for another bottle, then will sleep until around 8am - nappy change & bottle then will sleep again until around 10-10.30am! She is full on during the day but her sleep routine means that I can cope with it as I am getting lots of sleep!

    Not long to go for you.....how exciting! Take lots of pics - I have almost forgotten the birth and early days! Get filling that freezer too!!! :) LOL! x

    I just want to say 1 more day in work, 1 more day in work!! It's not until Saturday, I have 5 days off then 1 day in and then I'm on mat leave!! :)

  • D-day tomorrow. I bet it will come and go though. I'm really starting to work myself up which is stupid. I've been through it twice before but still I'm sh1tting myself over the pain...or over not knowing when/how it will start. Don't know which though :rotfl:

    I changed the bedding today so let's see if that Jinx's thinks :rotfl:

    Would love it to be tomorrow as that's the date they go forward in time in back to the future (just not the same year) and that's my favourite movie :D

  • IHateDida - those brownies look awesome, have bookmarked those! Thank you. Wow what a good girl Rosa is. My second dd was similar once I put her on formula for her last bottle (around 11pm), so much easier to cope with the days when you've had a decent nights' sleep. 6 more days for me, can't believe how quick it has come. Have enjoyed being pregnant but I am really looking forward to meeting our little man now.

    Neneromanova - I will keep my fingers crossed that your little one is here for tomorrow. Cool to be able to show your little one their date of birth in Back To The Future!
