Hope everybody is enjoying this rainy weekend!

As I'm going to classes, this week is 'show and tell' as my OH describes it!! Other wise known as taster night.

As it will only be my second class - I have no idea what to take!!!!! Could anybody give me some ideas......the only stipulation being that, it needs to be free or low syn. I am working a 12 hour shift, and will be going from work on Monday, ideally it needs to be easy to transport. I do have a fridge at work, but I'm stumped!!

    TIA
  • Hi all,

Went shopping last night, stocked up on lots of SW staples.

    Today has been:

B - banana on 2 small slices of w/meal toast [HEB]
L - (more a light snack) nectarine, packet Walkers french fries [4]
D - chicken fried rice, mushrooms, mange tout, eggs, sweetcorn [2 for oil]

HEA is milk in tea, and 2 more syns for sugar in it. Contemplating a glass of wine for 8 syns.

Bit stuck for what to make for dinner tomorrow night. I have 2 chicken breasts I want to use, a load of veg, and no inspiration. Any ideas?

I tweaked it a little but this is the recipe from the book..

    2 courgettes
2 red onions (halved and finely sliced)
1 red chilli, deseeded and finely chopped
    seasoning
100g low fat natural cottage cheese
    6 large eggs
    1 tsp dried mixed herbs
small handful finely chopped fresh mint

    serves 4
    free on all plans

    preheat oven to 180c / gas 4

Coarsely grate courgettes and place in large sieve, press down to remove as much liquid as possible and set aside.

Lightly spray a 20cm round shallow baking dish with frylight and set aside.

Spray a large frying pan with frylight and place over medium heat. Add onions, courgettes and chilli and stir fry for 10 mins. season well and transfer to the prepared baking dish, spreading evenly across the base. Spread the cottage cheese over the vegetable mixture.

Beat the eggs in a large bowl, season and add the dried mixed herbs and mint. Pour the egg mixture over the cottage cheese.

Please in the oven and cook for 30 mins or until set and golden. Remove from the oven and allow to rest before cutting.

Can be eaten warm or cold. If serving cold cool, cover and chill until serving.

** I only used one courgette, 1 onion and added a grated carrot.. Didn't use a fresh chilli, lazy chilli instead and didn't add mint either.. Added the red peppers on top too :)

Tin of peas mich city posted it earlier few pages back may be worth makin this I always goes down well

Pg you could make a stir fry with some of the veg some soya garlic and add in a tomato for flavour it does work

    Or one of my faves

How about oven roasted veg and the following...

    then butterfly the chicken
and make marinade of olive oil from healthy option lemon zest and rosemary

Mix those together the live oil the rosemary and the lemon zest

When grinding rosemary adda bit of salt it's important you grind it to a powder them mix in lemon juice lemon zest and olive oil

Add to the chicken marinade for 30 mins then cook

    This is really scrummy

Hope this helps. I love it and its also great on a BBQ

    Morning All :j

Am amazed that I got to today without bingeing. I really wanted to last night. Some days have been easier than others. Sometimes I've hardly thought about it at all, and others like last night, were torment.

I'll have to have something soon. I talked myself out of binge last night by telling myself that I'd just get to the end of the Six Week Summer Challenge and then I could have something. I didn't want to give in so close to the end, but it's heartbreaking not having anything.

We always have goodies at the weekend. I refuse to stop Mr Frog and the Tadpoles having their treats as they don't need to lose weight, they eat sensibly and healthily all week so why shouldn't they? They have got it right, why would I make a fuss? That is what I am trying to achieve for heavens sake.

Tadpole 2 could see I was struggling and wanted to help. He offered me ' a little' bit, and I feel like such an idiot telling a child that I wouldn't be able to stop, because I've managed to teach both my children that it would be greedy to go on and on and on, but I can't/won't do it myself.

I just need to remind myself that I can have chocolate again, I will have goodies at the weekend again, I just need to lose some more weight first, or I'll never make any progress. When I weigh in tomorrow it had so better have all been worth it!

Have a good day people xx

    Morning Frogga well done:T

Cracking work not binging yesterday It is more difficult when other people are having their treats but I agree it's more difficult when you are watching but seems like you have taught them well :)

Also I don't know what it is but I am convinced that apart from weekends being tough their is a trigger in head that seems to go off before weigh in days

There have been loads of other comments earlier on in thread too with a lot of people saying before weigh in they always want to binge- myself included

No doubt you using the Frogga bit of just until ..... Keep going Until tomorrow night when you have the weigh in and if you want to have a reward of some description then - well do

Funny thing is if you have lost or should I say when :j you may think
You know what I don't want it any more

Whenever you feel like binging/junk food today say right I'm going on the thread and hopefully apart from talking you out of it - by the time you have written a note th urge will be gone

    Have a fab day Frogga:j

    hi Magic,

I nearly did come on here last night for a post, just to get it all out, but we were all in the middle of watching TV and I thought I'd look like even more of a nutcase leaving the room to type on the PC! :D Everyone would have said 'where are you going, shall we pause it?' :o

You are so right, I often get to the day before weigh day, or a big event, and then binge. Recently I had an important job interview. I'd been good for 2 weeks leading up to it as I wanted to feel my best on the day. Then the day before I stuffed and stuffed. In the morning I couldn't get my trousers on, then I had terrible wind, and I felt sick all day :o Madness.

Am off now to do something. Or I shall sit here all day
