  • Siggy all updated. One of the brilliant things about being rushed off your feet at work is that you don't have the time or inclination to be out spending money - thank goodness because I hardly have any left this month, and the car is in for its service and MOT next Saturday - 6 days before payday! Please car, don't let me down...:cool:
    It's been a quiet week. Dieting is going well, work is busy, we are all fine, and hubby is starting to come round to the MSE way of thinking.
    I will be back regularly over the weekend and perhaps a little more during the week next week, once the exams are over and I can relax a little.
    Hope everyone is well.

    Oooh I wish it was! No I have one more MASSIVE one to go... the LAND .. this currently sits at £7345. I am aiming to get rid of this in 8 paydays. This means.. £918 a month.... I will add calculations soon as this is going to be tough...:rotfl:

    So Mr Hong Kong has refunded a stonking £3030.37 :eek::eek:- you may have heard me scream when I read it - never imagined it would be over £3k!!

    Yorkshirelass, what a horrible situation to be in. I must admit, I would have done the same as well. Hopefully you're worrying about nothing and your friend will be round with the cash soon, eternally grateful that you helped her out.

    More NSDs for me :) Not a single thing has changed in my budgets, and given that we're past the half way point, I am soooo looking forward to ending the month with cash in my purse! I WILL do it :A

    Got my yummy Quorn Bolognese out of the freezer this morning so I think I'll watch Martin's ITV show on my phone (who needs a telly?) while I wait for it to heat.

    Anyone got any interesting plans for the weekend?

    Evening all, congratulations to LAGL and NSK on your good news, Im working away at my debts slowly, I will get there:)

    Another SFD for me, as I was so tired when I finished work I went straight home and slobbed about at home before DD1 and DD3 came for a surprise visit, always love seeing DD's and DGC makes life worth it for me:)

    Have DGD1 overnight as DD1 is working tomorrow am, so we will be doing some baking tomorrow, and then she can take it home with her later on, as I live on my own its easier to make cakes etc and give to DDs after taking a bit off the end for me:rotfl:

    Anyway off now, DGD1 needs to get ready for bed

    Soiuxsie I smell a recipe to share....Hmmmmmmm quorn!!! Love it!

    Since we're sharing....

    400g Quorn mince
    2 peppers (red looks nicer, but any colour will do)
    1 onion
    2 cloves of garlic
    1 tin of tomatoes
    A good glug (about 4 tbsp) of vegetarian Worcester Sauce (or just the regular stuff if you're not vegetarian)
    • Add the onions and garlic to a large pan with a dash of oil and cook for 4-5 minutes
    • Add the peppers and cook for a few more minutes
    • Add the Quorn, tinned tomatoes and Worcester Sauce and simmer for 25 minutes

    Oh, and cook a bit of spaghetti at the same time :) I sometimes add a bit of basil, but only if it's in the yellow sticker aisle. The recipe works perfectly well without it. I tend not to add salt to anything so if you want, you could season it as you go.

    Not sure what the costings would be but this makes 4 generous portions. I buy either Quorn mince on offer or just the regular own brand frozen stuff is fine. I guess if you're keeping the cost down, one pepper would be enough. Maybe add 50g of pasta each?

    Off to do some maths now.....

    Edit: My adding up made the meal around 80p each using budget brand ingredients and assuming you have the Worcester Sauce (the secret ingredient...it wouldn't be the same without it!). As I said, they are quite generous portions, so on a budget you could easily split this into 5 portions, making it 64p each. I tend to use organic peppers and wholewheat pasta so that takes my version to £1.15 per portion.

    Well I have just baked Breakfast Sunshine buns from Jack Monroe's blog.. they are currently baking.

    I have also made a Moroccan style bulgar wheat dish with leftover butter nut squash cubes grilled, fresh coriander and flat leaf parsley, and a squeeze of lemon with sultanas pre-soaked.. Costings to follow... This will be served with bean/falafel burgers and yellow sticker frozen bap's with home made guacamole from yellow sticker avocado's that have survived in my fridge for four weeks...:eek:

    HM have a LOVELY well deserved break!! Great to have that CC bill off your mind to relax.. have fun in Wales. Stay MSE!!!
