She used to slightly salt her pineapple, apparently this stops the acid in the juice causing mouth ulcers and enhances the taste.
ahhh that might explain why it's fairly common in the states to put salt on grapefruit (not that i do, i think grapefruit is vile and possibly one of the worst food ideas ever)founder of Frugal Genius UK (Yahoo Groups)0 -

I do the same as Catowen, cut a slive off the top, then cut the skin off.
Pineapple is gorgeous with chicken, green peppers, apricots, ala Tropical Chicken, i can give you the recipe if you like, very easy. It's delicious in sweet and sour too.
you're welcome!
i discovered it because i HAD too!
papaya also works as a digestive aid, papain is used in meat tenderisers

thriftlady wrote:This enzyme also prevents gelatine from setting,so don't be tempted to put in a jelly.Tinned is fine because the enzyme has been destroyed during heat processing.
Apparently workers in pineapple processing plants have to wear special gloves because the enzyme will actually eat flesh!
Thanks for the tip about catarrh,I didn't know that.
i can believe that about eating flesh, a fresh pineapple can have quite a bite... it doesn't feel nice in a hangnail i can tell you that!
i knew about the geletine but i'm sure it will help others however i didn't know you could use tinned pineapple so thanks for thatoh, kiwi's keep gelatine from setting too...
i actually often make my own jelly by using packets of gelatine powder and fruit juice, next time i'll try a peach and pineapple and use the syrup from both and see how it works out. if it doesn't set it can be made into a smoothiefounder of Frugal Genius UK (Yahoo Groups)0 -
Of course you can have the recipe! This was originally a microwave recipe from my days atc school, but it can be adapted for a slow cooker quite easily.
Tropical Chicken:
4 chicken quarters (or any type of chicken really)
1 sliced green pepper
1 diced onion
15g/1/2oz butter
100g/4oz tenderised apricots (either soft ones of dried ones soaked overnight)
150ml/1/4pt stock
439g can pineapple pieces or rings, as prefered, in natural juice
seasoning
Pre-brown chicken - optional. Place pepper, onion, butter in shallow microwave dish. Cook covered for 6 mins medium power. Add chicken and apricots. Pour stock and pineapple juice over them and cook covered for 25mins or until the chicken is cooked. Add the pineapple, season, and heat for 5 mins.
Serve with green veggies and rice or noodles.0 -

Do try that,I did exactly this the other day after making fruit salad from tinned peaches and pineapple.I used fruit in juice and found it didn't need sweetening.I also had some juice left from making cranberry sauce(I added too much liquid to the cranberries),this was sweetened.I made jelly with both juices and set them in layers,a pink layer and an orange layer-big hit with everyone.
I find using gelatine gives a much softer, wobblier set than using the blocks of flavoured jelly.I've used leaf gelatine as well,it dissolves better than powder but is very, very expensive.0 -
My OH has just cut up a pineapple that I was saving for later in the week and I know that it will not last until tomorrow if I just put it in the fridge. I will never be able to resist it. I've already eaten a couple of pieces! Does anyone know if I can freeze it?
thanks

Can anyone help?
I've got a two and a half week old pineapple which I fancied when I did my shopping but never got round to eating. Will it be really manky by now? I haven't stored it in the fridge. Any suggestions on what I can do with an old pineapple?
Thanks in advance!
