  • Pineapple upside down is more like a pudding than cake, basic victoria sponge recipe (if you don't have one, it must be on the internet somewhere) but before you put mixture in tin arrange pineapple in the bottom of the tin and drizzle golden syrup over it, then pour in Victoria sponge mix and cook. It's yum with custard, or cream. One of the first cakes I made at school, too many years ago to remember!

    Me too! And I remember it was buddy lovely - yermmmmmmm!

    Right just had a quick flick thru me cookbooks and there are surprisingly few recipes for pineapple - Jamie says u should serve it with yogurt and then bash some mint leaves up with some sugar to put on top *shrugging*

    Or make pina coladas! Now THAT is a much better suggestion *wobbles off dancing like Carmen Miranda* :D

    Great tips,sadly I only have a dreg of smirnoff and no tequela.

    We are having hm pizza for tea tonight so a bit will go on there as well as a upside down cake.

  • AFAIK pineapple freezes okay. You could chunk some and freeze it and then put it into sweet and sour or on pizzas etc.

    I was gunna put some in jelly but then read a post and it said there is something in pineapple what stops the jelly setting.So I might pop some on top with some whipped up double cream.Yummy!

    I will have a go at freezing a bit of it,if it freezes and defrosts fine then I might go back to LIDL tomorrow and see if they have any left.
