Help!
I had two pineapples sitting in my kitchen ripening away happily to themselves. They smell lovely and we were going to eat them for pudding tonight.
My friend popped in this morning with a carrier bag full of pinapples - she bought them on a whim last night when they were reduced at the supermarket, and now she doesn't think she will use them, so she gave them to me!
So I now have 9 huge pineapples that are ready to eat now, and with the greatest will in the world we will not be able to eat them before they go bad. I've been looking in my books for a recipe for pinapple jam but can't find one, at the back of my mind there is a vague idea that pinapples don't allow things to set ?
Anyway, does anyone have any ideas what I can do with all these pineapples?0 -

There's loads of pineapple jam recipes here - I *think* that it's just jelly that's no good for pineapples as the enzymes stop the gelatine from working.

Masses of pineapple jam to make this afternoon, followed by a boozey drink from the skins and planting the tops for some lovely houseplants then! Fantastic, will hardly have to throw anything out to compost - what a fantastic gift I was given in a carrier bag full of pineapples....must remember to give her some jam back in return.0 -
pineapple salsa freezes well:j Baby bonce was born on Christmas morning after a ridiculously short labour and no pain relief! If only losing the baby weight was as easy!:T0

I bought a pineapple last week then forgot all about it an bought another this week. So I now have two pineapples and there is only so much you can eat! I'll prepare one for lunches this week but what about the other? Will it freeze so that I can use it for upside down pudding at a later date or can I pickle it?0

IME, pineapples aren't fit to eat for a couple of weeks anyway. I'd eat it fresh as it is. Alternatively, try this older thread: Recipes for pineapple.

Having used my super duper Lakeland contraption to prepare my fresh pineapple I am left with half of it to eat tomorrow night.
The label on the pineapple says not to refrigerate it.
Will it keep better in an airtight box/glass dish with a lid?
Refrigerated or not?:wave:0
