I've had to remove a post from this thread for copyright reasons. Here's the link to the recipe:
Pineapple Upside Down Pudding
There's an earlier thread with ideas for using fresh pineapple that may help so I'll add this thread to it to keep the suggestions together.

can't beat it on its own with good strong cheddar... call me old-fashioned, but I love it!
as naff and 1970's as it is, cheese & pineapple on sticks is ALWAYS the first thing to go at parties! - I do mountains of it as an ironic joke, but people just wolf them down!!
In the probably unlikely event that I actually post something of use to someone, an ickle vote of thanks would be much appreciated, in fact I might frame it and put it up on the wall next to my cycling proficiency certificate0 -
Just been and got 9 very ripe pineapples from the market man for a bargain £2 :j
Does anyone have any recipes making jam or chutney with it?0 -
To my knowledge and I'm not an expert on the subject but you arent supposed to use over ripe fruit for jam or chutney making as the result doesnt keep very well. But if you want to use them up in other ways.I can recommend pineapple ice cream and what about pineapple upside down cake. You can also freeze the pineapple for use in sweet and sours and cheesecakes later

First of all get peeling and chopping!
Freeze as much as you can fit it, then use up the rest in a hurry, Zap it in a blender and drink it mmm yummy!
Make cakes etc, I bet you could dry chunks in a low temp oven to put on cereals?I’m a Forum Ambassador and I support the Forum Team on the Old style MoneySaving boards.

I've just had a google for pineapple jam for you and there loads, the one from mammas health dot com looks really good.
There are also loads f chutney recipes out there too, the pineapple chutney on indian food forever dot com sounds very tasty.
Wish your market man was near me, my mouth is watering at the recipes (I'm so sad I read pickle recipe books like some people read a novel).
I have not worked out how to do links yet - sorryIt matters not if you try and fail, and fail and try again; But it matters much if you try and fail, and fail to try again.

I've just bought a fresh pineapple reduced to 35p :j I'm intending to use a little of it alongside some gammon offcuts we're having, tonight. I thought I'd make a pineapple cobbler for tommorrow but there will still be some left. Does pineapple freeze ok? If so I can save some for another time. If not, does anyone have suggestions for another recipe to use it up? Thanks.

I'm not sure that anything that is mostly water freezes that well.
Well, obviously it'll freeze well, I mean it'll probably be quite mushy when it's defrosted. Might still be able to use it for cakes or fruit juice type drinks.0
