Hi, I usually cut up fresh pineapple into chunks, and freeze it. As there's only two of us, we'd have a job to use it up otherwise.

I then use the chunks to put onto HM pizza, along with veggie "bacon" rashers cut in pieces, or I add them to sweet'n'sour recipes.

If you've hot some chicken, pineapple chicken is lovely make a sauce using some of the juice and corn flower( to thicken), and little soy sauce to take away the sweetness then add chunks. Pour over chicken serve with rice etx, tastes lovely!

Have also made this with pork.

And we're having one tomorrow! -big treat in our house. Mind you it is nice with Rachel's Dairy Coconut Yogurt (must find a way of replicating this myself).
  • Many thanks for your replies everyone. I've decided on the pineapple upside-down cake as tommorrow's treat.

Can any1 please tell me how long my pineapple will last in the fridge.

Its soft to touch but not overly soft. If i diced it it would need to last till friday.

Am I best leaving it whole.

Do you know its time like this when we realise that my era wasnt taught nothing like this at school

Hi, Once you cut into your pineappple it will deteriate more quickly. I would put it in the salad tray of the fridge and it should be fine until Friday.:)
The time will come when you have everything but time.

    Hi Stacey:hello:
I would agree with Lady A - don't cut it until you need it :) Alternatively, you could cut it, keep out what you want for now, and freeze the rest :)

Don't worry if you feel a bit clueless - I was pretty clueless when I first found OS myself (and still am for quite a lot of things :D )

There is a fresh pineapple recipe thread, so have a browse if you need any ideas, and I will add your thread to that one later

    Thanks:)
