  • If you put pineapple in jelly it won't set, never tried vodka jelly tho..............that would give DS a bit of a surprise! ( he's 39 but if jelly is around reverts to 3)
    just sit and eat the pineapple! mmmmm think I must get one now !!!!

    Yes it's the jelly thing you can't do, although tinned is fine -apparently the canning process kills off the enzyme that prevents the gelatine setting.

    As for freezing I remember making a rather gorgeous pudding with fresh pineapple that was frozen. I think it was called Pineapple Crush.

    It was broken up meringues, whipped cream and chopped pineapple. Mix together and pile into a springform cake tin lined with clingfilm (enough clingfilm so that it overhangs the sides of the tin). Wrap the excess clingfilm over the top of the 'cake' and freeze. To serve allow to soften slightly before slicing.

    upsidedown cake sounds great! never made it before and i have a cupboard full of baking stuff so i'll go and have a look for a receipe now. oh no.....just realised i used all my eggs last night. i imagine i'll need some for that right?:confused:

    would've made pizza but i already have a casserole going in the SC.

    Here's the recipe I use for upside down cake. Pineapple Upside Down Cake. I did some reading online and you can substitute 3 level tablespoons of mayo (not salad cream) for an egg. With the recipe only calling for one egg, it shouldn't make too much difference. You can either cut your pineapple in spears or in rounds. I like it better in rounds as I think it looks nicer. :rotfl:

    Edited to add: If I don't have orange juice, I use the juice from a can of pineapple which you won't have using a fresh one. You can use about any kind of juice (apple, white grape, light coloured juices,) you have or water/milk.

  • Hello all, I bought 2 pineapples a few days ago on offer in Mr T's. The first went into a disasterous jam-making effort, which I have vowed never to repeat. :o

    So, I have a fresh pineapple left over that I can't think what to with it. I'd love to add it to something cakey/baked (I have the baking basics in my larder), any ideas?
