    King Edwards or Maris Piper potatoes are the best

    Par boil them until the outside is just slightly beginning to break away [as per TV chef Phil Vickery!!!] drain and then toss in the pan to fluff up the outsides more - this makes them crispy.

    Heat oil in oven - it needs to be very hot before adding potatoes to it. For extra flavour [though more expensive] you can use goose fat, but I only use this if I am entertining.

    Once in the hot fat, turn regularly to give an even crispiness.

    thanks guys... i thought id make the potatoes from scratch because the chicken isnt (eeeekkkk i hear u scream) i just wouldnt know where to start...

    When I was young we always called them scallions, but my gran was Irish so it may have come from her.

    After the Xmas excess I did mine today with frylight instead of olive oil (veggie so no meat juices for me).

    They were just as nice and a lot healthier and fit into a slimming world diet too.

    Having friends round for dinner tonight and oven space is going to be a bit tight....
    Will it be all right to parboil and roast the potatoes now then reheat them in about 7 hours time? Will they go brown or soggy or anything?

    They will be absolutely fine. The oven will crisp them right up again. You could aways cook for 20 minutes, then heat up for 20 mins or so
