In my slow cooker today...

    Ok, this is what I've now got cooking today (a combination of ideas and recipes picked up across the forum) ....
    Italian Chicken

    4 chicken breast
    1/4 cup flour
    salt & pepper
    2 tbsp Parmesan cheese, grated
    1 tsp paprika
    tin chopped tomatoes
    2 tbsp tomato puree
    1/2 cup chicken stock
    dash worcestershire sauce (I add it to everything!)
    2 tbsp fresh basil, chopped (could use dry)
    2 cloves garlic, chopped or minced
    1 green pepper, sliced
    1 red pepper, sliced
    1 cup mushrooms, sliced
    2-3 courgettes, sliced
    salt & pepper to taste


    *Combine flour, cheese, paprika, s & p and coat chicken breasts with mixture.
    *Combine tomatoes, puree, chicken stock, basil, garlic and season.
    *Place sliced vegetables in bottom of pot and pour over tomato sauce.
    *Place coated chicken breasts on top of vegetables and sauce.
    *Cook on low as per your usual timings (5-6 hrs?)

    I'll probably serve it with pasta or if I'm really good today may even make a foccaccia bread to mop up the juices ;)

    sausage casserole with 6 HUGE fat beef sausages, red yellow and orange peppers, an onion, a bayleaf, 500ml of HM chicken stock and a spoonful of cajun spice mix from the west indian grocer's.
    Having it with a choice of rice or bread.

    Cobbled together my own cheat's attempt at chicken lasagne in slow cooker.
    Chopped tomatoes,onions and garlic, layered with sheets of lasagne, chicken (diced) in cream of mushroom condensed soup. Put on high for four hours.

    Should either be good or horrrible!!! Will let you know.:)

    Some good friends of mine will be stopping by this evening with the express intention of treating me to a chinese meal. This is really great because I haven't had one for oh, more than four years now. The nearest take-away places don't deliver, and a taxi out here from in town makes the cost of a meal a joke.

    Anyway, they were concerned about safe parking so in the end we decided to go fetch a takeaway from the one nearest to my village on the edge of town and that way I get the doggy-bag.

    Better still I'll be able to buy a complete meal and stash it away in the freezer!

    To top this off... I've made some pancakes and stuffed them with cherry pie filling.

    Our plans have altered, my dh is treating us tonight because today he has finally (finger's X'd) reached the end of a particular career project which he has been focused on for roughly 18mths (to the exclusion of all else - hopefully he'll recognise who we all are that will be sat around the table with him ;) ) Fair enough, he won't know for *certain* for a few more days, but at least the bulk of the stress and pressure is off - PHEW!!!!
