    yes, I sort of make it up as I go along. I started cooking a couple of years ago, and generally cook for my wife (she is working and I am not at the moment). I used to buy Pataks curry paste, but then tried to copy the flavours, which took a bit of time to master. I stocked up on the following:
    Hot chilli powder
    Turmeric powder
    Cumin powder
    Garam Masala powder
    Tandoori Masala powder
    Cardomon pods - green and the big black ones
    I always have a good supply of large white onions, garlic bulbs, lemons and fresh coriander, and loads of tins of chopped tomatoes (cheap ones are fine).
    I also use different types of lentils, because when you use them, they swell up and absorb water, so any sauce will thicken up.
    I use all types of meat - chicken, lamb, braising steak, mince (for kofta - meatballs), except pork (the others seem to take on flavour better).
    The next time I cook a curry - soon, I will try to post the exact details.

    not really an SC question but dont know where else to ask it, I am going to attempt to make burgers with the kids tomorrow and want to use up all the mince so will make more than we can eat. would they be ok to freeze? and if so how would I reheat them again?

    I would not reheat them, but simply put the raw mixture in a freezer bag and then defrost and cook it when you need it.
    Only cook what you need to eat at any one time.
    Having said that, I like to eat cold burgers in a sandwich, because I think the flavour is better, especially with some hot chilli sauce.

    Then again, I am a bit of an animal.!;)

    another question (sorry) it says to put fresh breadcrumbs in it but how do i get them without a food processor? or can i just soak them in a stock (as read somewhere) rather than get them into crumbs.

    Breadcrumbs = grate the bread, you don't need a processor. Its always easier with slightly dry bread so leave it out overnight if you can.
