Personally, I'd prefer a biker to someone who threatens to make my sister and family homeless if He doesn't get his own way.
Bikers don't necessarily spend the family budget on their bikes or going racing, leaving their partners to deal with children they both brought into the world and have an equal duty to maintain. Or spend on holidays away when one half has still been in debt.
Don't ever assume a biker is intrinsically a bad person. Most pay their bills and meet their family responsibilities first and foremost. i think there is some jealousy from you op , you don't get time away and this is the real problem , i saw it when you said we couldnt go on holiday.
money is an issue for you both , neither of you seem mature enough to budget properly and both have debts and seem to be ignoring them (your choice)
you need to sit down together and compromise, if he wants to go away for a weekend , then he needs to give you an op to do something for yourselves
you also need to work out exactly what your spending on what and where and look at what is spare cash and what is money actually needed for your bills/kids

I suspect we are only getting half of the picture here.
To be honest I wouldn't let my partner have access to my bank account if they had run up large debt which they had not yet paid off.
