Banana flapjacks are our staple for past-it bananas. Add 2 mashed bananas and some raisins to an ordinary flapjack recipe (cut down on the sugar and butter slightly). Delicious!0

Or barbecue them - stick them on the barbie (or in the oven) till the skins are black and east the cooked banana with ice cream. Yum! If you like chinese style banana fritters etc - this tastes just like it, but without the fritter.
Also - you can freeze them to make banana bread/cake with if you can't use them now. No use defrosted for anything else afaik, but they work well in cake/bread.0 -

Sure thing :-). This is a National Childbirth Trust recipe, I got it over 20 years ago and have been using it ever since, so it's pre-metric I'm afraid.
6 oz. butter
5 oz brown sugar
8 oz rolled oats (ie ordinary porridge oats)
2 small/ 1 large banana, mashed
4 oz raisins (or chopped dates)
makes about 16 allegedly, I always make double quantities and they don't last very long!!
Melt the butter in a big pan. Take it off the heat and mix in all the other ingredients (oats last). Then pour into a baking tray and cook for 20-25 mins in a pre-heated oven, Gas 7, 220 c. Easy eh? Enjoy!0 -
