    Sometimes I buy a big bunch of bananas and they disappear within a couple of days. Other times, the last four bananas seem to hang around in the fruit bowl and I eventually have to throw them onto the compost heap. Such a waste - but the family can't stand bananas when they are starting to blacken and turning very sweet.

    Anyone got any recipes for using up over-ripe bananas?

    banana smoothies,my husband reconds it the best time to make them is when they go black.

    bananas will be mushed up and cooked so best use the really ripe ones!

    I like banoffee pie with firm bananas myself.... ooer!:o

    My Mum used to peel them, make a slit down the middle and fill the gap with choc buttons ( i guess any choc would work), then wrap in foil and bung in the oven, OMG they are YUMMY, we used to have them with custard or ice cream.

    Banana split, Banana vread, toffee bananas (like toffee apples), sliced on cereal, pancakes etc

    Banana pancakes...
    Sorry I don't do weights and measures..but you'll get the gist.
    Chuck a large amount of self-raising flour in a bowl, add one egg mixed with milk, a pinch of salt, a couple of teaspoons of sugar, vanilla essence. Whip with a beater or a handblender. Make sure the batter is quite thick and lump free.
    Mash up the bananas till they are all squishy. Add to pancake batter and chill for half an hour.
    Heat up frying pan with a knob of butter and a tiny splash of oil to stop it all burning. Get the batter and `drop' it in large spoonfulls when the butter/oil is hot enough.
    If the batter is thick enough they should puff up and be like american pancakes. Turn 'em over with a spatula...
    They are lovely and don't last long out the pan...specially with maple or golden syrup and ice cream.

    This is a really good recipe for banana bread, I've made it so many times and it freezes really well too.

    (I freeze the bananas too, they go really soft when you defrost them but they work brilliantly in cakes, muffins etc)

    My kids like bananas in sandwiches with honey.

    I have given them to them when they are slightly blackening but not when they are totally black, saying that they never look inside the bread so maybe I could get away with that in future, lol

    the sarnie is also gorgeous toasted, yummy :)
