    This recipe for banana cake is soooo good, it's the only one I use :) It makes a lot but a half quantity works just as well (2 eggs) and I've also found it freezes really nicely.

    That does sound good. What sort of flour do you use? I notice it says "All purpose" but not quite sure what to use.

    All purpose is plain - that's what I used last time and it was fine. Some of the reviews say it doesn't rise much but mine did! Had to keep checking to see that it was still in the tins lol :) I sprinkled the leftover cinnamon sugar on the top and that's really yummy.

    Oh, and I've found that it takes a little bit longer to cook but that could just be my oven.

    No I didn`t grow them myself :rotfl:

    I`ve got about 10 quite ripe bananas due to DS 1 2 &3 being ill over the wekend.
    Any one got a good loaf recipe or any other ideas?

    Rosemary conley banana an sultana cake................I make this at least once a week and its lovely, It has no fat so is better for you.

    Per 50g serving - 100kcal/0.4g fat
    1lb 3 oz (475g ) ripe bananas (approximately 5 large) peeled.
    2 beaten eggs
    6oz (150g) brown sugar
    4oz (100g) sultanas (you can leave these out if you have none or substitute it for something else)
    8 oz (200g) self-raising flour
    Mash the bananas and add the eggs, sugar and sultanas. Mix well, then stir in the flour. Place in a lined 2lb (800g) loaf or cake tin. Bake for 1 hour and 15 minutes in a pre-heated oven at 180c, 350F or Gas Mark 4. Remove from the oven and leave to cool. When cool, store in an air-tight tin for 24 hours before serving.

    1 nice ripe banana, glass of milk, scoop of vanilla ice-cream into a blender... delicious!

    or, minus the ice cream = milkshake

    you can also peel, wrap in cling film and then freeze. they make a nice dessert, with an almost ice cream like consistency. you can of course cover the frozen ones in melted choc, sprinkles etc. or put on a lolly stick to make lolly pops

    Chocolate and banana muffins

    for 12

    250g plain flour
    1 1/2 tsp baking powder
    1 tsp bicarb
    1/2 tsp ground cinnamon
    25g cocoa powder
    50g soft light brown sugar (tho caster sugar also works well)
    125g choc chips or chopped choc
    85g walnut pieces (optional - I prefer without)
    2 ripe bananas
    50g butter
    225g natural yogurt
    150ml milk
    1 egg

    sift flour, baking powder, bicarb, cinnamon and cocoa into a large bowl. Stir in sugar, choc chips and nuts.

    Mash bananas, add to melted butter, yogurt, milk and egg. Stir until combined.

    Add banana mixture to flour mixure and stir until just blended - do not overbeat. Divide between 12 muffin cases.

    Bake for 20 mins at 200C (I do mine for 15 mins at 185C as I have a fan oven) until risen and firm to the touch.

    Eat!
