They are brilliant for baking. If you can't use them straight away just pop them in a plastic bag unpeeled and freeze. When you want to make banana muffins or banana bread they are ready to use -just defrost in the microwave for about a minute. They look pretty revolting when you peel them -bit like a giant slug, but they're fine for baking0

This is a really good recipe for banana bread - the sugar and cinnamon 'coating' is delicious and it's even better if you sprinkle the leftover sugar on the top of the cake0

I have my first batch of banana muffins in the oven as i type. They look great but i suppose the proof will be in the taste.
For some reason i am quite a good cook but my baking is usually disasterous!

Card #2 £6. I will not be skint at Chistmas this year!

Hehe Rikki,
Well for my first try they actually tasted really good, the kids have wolfed them down.
One slight problem, once cooked the sides and bottom stuck to the cases.
Not a problem for the kids or us but as i had made so many i had planned on my hubby taking a batch into work tomorrow instead of him buying cakes but am too embarassed to let him do so.
Does anyone know what i did wrong?

I'm using mine to make a toffee flan - but I had to buy several things I wouldn't normally buy to do this. But it will be a nice treat I am sureDream of being mortgage free....

Did you use paper cases?
I always use paper cases when I cook muffins.

Ok folks, I was at work today and took the kids shopping, they were being grumpy so we didn't go to Sainsburys, just the bakery and greengrocer because I've got a good stock of in the store cupboard and freezer now.
Anyway, to stop rambling, they each got to choose something at the greengrocer, we got a pineapple and a huge bowl of bananas. So my question, apart from the obvious (turning into a monkey after eating them all) what else can I do with them? I've tried to look for a cereal/breakfast bar recipe, but I'm having trouble finding one the kids could help with. Also, if anyone has a good recipe for banana cake, that would be great, as the kids have asked if we can make that tomorrow.
