I make this Carrot and Banana Cake with Cream Cheese Frosting -
75g butter, softened
75g cream cheese
150g icing sugar, sifted
1 tsp vanilla extract
Chopped walnuts, to decorate"Cheap", "Fast", "Right" -- pick two.0 -

Banana loaf (vegan)
3 medium Ripe bananas, mashed
1 teaspoon Baking soda
2 tablespoon Ground flax seed, mixed with
2 tablespoon Water
¼ cup Applesauce
1 cup Packed brown sugar
1 ½ cup Flour (use up to 1cup whole
Wheat ..half WW and half
White works best...all WW
Doesn't cook quite right)
1 ½ teaspoon Baking powder
¼ teaspoon Salt
"Cream" applesauce and brown sugar, add flax mixture. Mash bananas and baking soda together, add to the other mixture. Mix dry ingredients together. Stir wet and dry to moisten. Use a 9 x 5 inch loaf ban (nonstick or sprayed with Pam). Cook at 350 (175C) for about an hour until it passes the toothpick test.One day I might be more organised...........

If you don't have time to bake a banana loaf there and then, pop the bananas in the freezer. These all sound delicious. We never have bananas long enough to start going brown. And that's the way I like them. My husband and son snaffle them well before that stage!May all your dots fall silently to the ground.0

we don't normally either - my mum gave me these as she had lots and my dad also likes them almost green!! - but think i will buy double to let them go brown - its worth it!!0
